Help me with a menu- please.

OK - I have 8 girlfriends from college coming on Saturday night. Most I have not seen in 15 years!

We just want to sit around and catch-up so I don't want to cook. We decided to have appetizers and desserts only.

Here is what others are bringing:

Taco dip
cocktail meatballs
artichoke dip
Texas Caviar- no idea what this is
hummus w/ pita bread

and two desserts- don't know what they are

I want to have a hearty appetizer - like wraps, mini hoagies, or tomatoe pie. Something easy but filling. I just can't think today.

Any ideas what to add?
 
you could just go to your grocery stores deli and order a bunch of subs, they will make the subs and then cut them into 2 inch sections and arrange them on a big platter. People love these! If you order an assortment of different meats, everyone will find a few that they like!
Easy and simple and not a lot of mess to clean up later.
 
Do you have a Sam's or Costco's ...they have great H'ordoeuvers (sp)...you might want to look there.

Thanks for the suggestions. Sams or Costco is a great idea. I'm really excited to see my friends- nervous too. It's just been too long.
 
Sounds like you might need something with a little substance (I know when I get together with friends we need some sustenance in between the cocktails!). I'd do calzones - we have an amazing deli that makes them and I just reheat.

Or maybe some soup with crusty bread that you can make (or buy) ahead of time.

Thta's what I was thinking when I said hearty. I called our deli and they have a slammer tray (hoagies) w/ tomato pie for $29. I think that's a good deal. I should ask about the calzones too.

I was thinking wraps too- I wanted a little more elegant than hoagies but hoagies are easy.
 
I was thinking in the other direction - some simple fruits and vegies.
 
If the Texas caviar is the same recipe I have it has black eyed peas, black beans, pinto beans, orange/yellow peppers, white corn, jalapeno pepper, green onions and a sauce made of oil, vinegar and sugar. I serve it with the Tostitos scoops chips. It is WONDERFUL!

Some places carry wraps, and they cut them into pinwheels before they put them on the tray, so they look real elegant. Or you can order wraps, and do this yourself, if you are comfortable using a knife. What you would want to do is take a serated knife and make crosswise cuts about one inch apart on your wrap. That will give you the pinwheel. Then take a nice tray and put some garnish on it - (i.e assorted lettuce leaves) as a bed/lining for your tray. It looks really nice and the pinwheels are filling, but not too much.
