Help me with a good "morning" dessert/danish/bakegood?

My mom is coming to visit me on Saturday...around 11:30. (She only lives about 45 minutes away from me, but it's hard for her to get away that often on the weekends as she has to care for my grandmother alot.)

Anyway, I wanted to bake something for us to have with coffee before we hit the mall. (typical mom/daughter day - shopping!) We'll probably go for a late lunch, so I want to give her something that will tide her over until then. (I also get VERY cranky if I'm shopping and under fed.)

Can anyone give me an EASY recipe for something I could bake? (I'm somewhat challenged, heheh) Or something to buy...that I could serve with coffee?

I would probally just buy some coffee cake at the bakery. However, I also would suggest (if you really want to make something) locating a Tastefully Simple consultant near you and making the Absolutely Almond Pound Cake. It is very easy to make and is really good. All you need to make it is the mix, a cup of water and 3/4 stick of butter. I think this is easy, but a lot of steps. Most items are pre-cooked.

Breakfast Lasagna
from the Crystal Palace, Magic Kingdom

(6 servings)

Make the pastry cream first
1-1/2 teaspoons vanilla extract
6 egg yolks
1-1/2 cups milk
1/4 teaspoon salt
1/4 cup all-purpose flour
3/4 cup sugar


In a 2 quart saucepan, combine sugar, flour, salt and milk over medium heat and cook stirring until mixture thickens. In a small bowl with a fork, beat egg yolks slightly, beat small amount of milk mixture into yolks. Slowly pour egg mixture back into milk mixture. Stirring constantly, cook over medium low heat until mixture thickens. Remove from heat and stir in vanilla extract. Chill cream until ready to use.

Assembly:
6 pancakes
6 waffles
1 pound of strawberries
8 ounces of blueberries


Put a thin layer of Pastry cream in a pan, make a layer of waffles, put a layer of pastry cream. Cut strawberries into slices. Take half the strawberries and half the blueberries and make a layer of fruit. Top the fruit with a layer of pancakes, then layer of pastry cream. Garnish the lasagna with the rest of the strawberries and blueberries. Bake in a 350 degree oven for 20 minutes.



If not, try any Entennmans pastry from the grocery store. I love their cheese danish.

Baked French Toast Casserole with Maple Syrup

Recipe Summary
Prep Time: 20 minutes Cook Time: 40 minutes
Inactive Prep Time: 8 hours Yield: 6 to 8 servings
1 loaf French bread (13 to 16 ounces)
8 large eggs
2 cups half-and-half
1 cup milk
2 tablespoons granulated sugar
1 teaspoon vanilla extract
1/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
Dash salt
Praline Topping, recipe follows
Maple syrup

Slice French bread into 20 slices, 1-inch each. (Use any extra bread for garlic toast or bread crumbs). Arrange slices in a generously buttered 9 by 13-inch flat baking dish in 2 rows, overlapping the slices. In a large bowl, combine the eggs, half-and-half, milk, sugar, vanilla, cinnamon, nutmeg and salt and beat with a rotary beater or whisk until blended but not too bubbly. Pour mixture over the bread slices, making sure all are covered evenly with the milk-egg mixture. Spoon some of the mixture in between the slices. Cover with foil and refrigerate overnight.
The next day, preheat oven to 350 degrees F.

Spread Praline Topping evenly over the bread and bake for 40 minutes, until puffed and lightly golden. Serve with maple syrup.


Praline Topping:
1/2 pound (2 sticks) butter
1 cup packed light brown sugar
1 cup chopped pecans
2 tablespoons light corn syrup
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
Combine all ingredients in a medium bowl and blend well. Makes enough for Baked French Toast Casserole.
 
I made these a few months back and they are WONDERFUL. I happened to use Ghirardelli Bittersweet chips in the dough instead of the Godiva chocolate. You can use mini chips or any other chocolate you choose.

The cherries and the flour mixture (place in refrigerator after cutting in the butter) can be prepped the night before.


Godiva Bittersweet Chocolate Scones with Rum-Macerated Dried Cherries

Yield:_12 scones
Difficulty:_* (Easy)
Preparation:_30 minutes plus standing, baking and cooling times


Macerated Dried Cherries:
1 cup dried sweet cherries
2 tablespoons rum

Scone Dough:
2 cups all-purpose flour
1/2 cup confectioners' sugar
2 1/2 teaspoons baking powder
1/8 teaspoon cream of tartar
1/2 teaspoon salt
6 tablespoons butter, cut into small pieces
1/2 cup heavy cream
2 large eggs, at room temperature
1 1/2 teaspoon vanilla extract
1 bar (1.5 ounces) Godiva Dark Chocolate, chopped

Dipping Chocolate:
2 bars (1.5 ounces each) Godiva Dark Chocolate (optional)

Make the macerated cherries:
Place cherries and rum in bowl. Stir and let stand, uncovered, for 2 hours.

Make the scone dough:

1. Preheat oven to 400°F. Line baking sheet with parchment paper.

2. Whisk together flour, sugar, baking powder, cream of tartar and salt in mixing bowl. Cut in butter until small, pearl-size bits form, using pastry blender. Whisk together heavy cream, eggs and vanilla extract in another small bowl. Add egg mixture to dry ingredients with soaked cherries and chocolate. Stir just until mixed. Dough will be slightly sticky to touch.

3. Turn dough onto floured work surface and knead briefly 6 to 8 times. Pat dough into 9-inch round disc. Cut into 12 wedges. Place on baking sheet, about 2 inches apart.

4. Bake for 18 minutes or until golden brown. Serve warm as is or cool scones on baking sheets for 1 minute, then transfer to wire racks. Cool completely.

5. Place chocolate in microwave-safe cup. Microwave on medium (50% power) for 1 minute. Stir. Microwave 30 seconds more or until chocolate is softened. Stir until smooth and let cool.

6. Dip one corner of each scone into melted chocolate. Place chocolate-coated scones on sheets of waxed paper. Let stand until chocolate has set. Serve scones same day they are made.
 
You'll need a 10 x 15 x 1 Jelly Roll Pan. You can use an aluminum disposable one--if it's a few inches too long or short, don't worry about it.

Grease and flour the pan.

Cake:

1 Duncan Hines Yellow Cake Mix
2/3 cup Oil
2/3 cup Milk
4 Eggs

Mix all together with a mixer (use the cake mix directions as a guide on how long) and put batter in prepared pan.

Bake for 20 minutes at 350 degrees.

Crumb Topping:

4 cups Flour
2/3 cup Light Brown Sugar
2/3 cup Sugar
1 tsp. Vanilla
1 1/2 cup Melted Margarine or Butter
2 Tablespoons Cinnamon

Mix all ingredients together until crumbly.

Spread on top of cake and bake for 20 minutes more at 350.

When cake is cooled, sprinkle top with confectioners sugar.

Yes, this is a big cake! Good thing to make for a lot of company or an office function where a lot of people work. If it's just you and mom eating it, send half to work with your DH.
 
How's this for easy.

Lightly butter a bread loaf pan.
Take a can of crescent rolls. Unroll them and smear some butter on them, then put a little cinnamon, sugar and chopped pecans (or other nuts). Roll them up and layer them in the pan. Top with a little more cinn/sugar/nut mixture and bake at 350 degrees until cooked through. Delicious!! And oh so easy! :teeth:
