Help me plan the non-party party

My third child is making his first holy communion. I wasn't planning on a big party as it's at 9 am.
However, one invite a facebook comment, an in law phone call and now it's a party.
I was planning on brunch. But as the list grows and travelers are coming, I think I might have to feed them two meals.

I have brunch down. But what should I have for the stragglers? It has to be more upscale than a ten foot sub. But no lobsters either, somewhere in the middle. To feed I am guessing about 25-30. Any ideas?

How about quiche. Can be served warm or room tempature and some fresh fruit or salad.

You're going to be busy - I know, both my kids made theirs years ago. So I'd keep it simple. For my DD's, I ordered party platters from a catering company that unfortunately isn't around anymore. The local grocery store here does similar ones. I'd get nice lunchmeat platters, rolls, and some sides ordered. That way you're not slaving in the kitchen when you are the host.

I'd also do the nice disposable plates and cutlery that looks real - our Costco carries it but I recently saw some at the grocery store. Saves time for clean-up!

Our grocery store does some really nice platters - they do a tenderloin one (it's cooked nice and rare and chilled, sliced then for sandwiches) and shrimp ones too. Oh, and they have a poached salmon one that's really nice too! So you can do nice food, and really for the work you save it's worth it (it's actually not more than buying it yourself honestly, at least when I did it for another party a while ago).
 
Pulled pork in the crockpot served with min slider rolls and cole slaw?
 
So you are feeding them brunch at 10:30 ish and then want to feed them again around 5 or so...early dinner perhaps? I would either grill burgers and dogs or have your crock pot ready with pulled pork, or bbq beef, or sloppy joes, or you could have a brisket cooked, sliced and reheat it in a roaster. Chips, salads, fruit, brownies, all ready the day before.
 
Good point! I am thinking now maybe just do some apps and then a big lunch! Most people are coming from at least two hours away so I feel like I really need to feed them.
Then I could do flank steaks,tequila chicken, roasted potatoes some kind of bean salad and call it a day!

I think you're right. I'd assume they ate breakfast, set out sweet rolls and fruit when you get home (around 10:30?) and then do a big lunch/dinner around 1:00.
