Help me plan a solo day to Epcot

I find myself with the opportunity to go to a theme park one day while I’m down in Orlando for a conference mid January. I’m thinking about doing Epcot and I have not been there since ninth grade and I’m 44. 😁 Tell me what I should do! I’m thrilled at the thought of going solo and doing exactly what I want to do all day long sans children 😁😁😁
I like rides in general except for those that sling you around too much or hurt your back.
Food recs? I am an adventurous eater who is vegetarian, although I do occasionally eat fish.
Thanks! I haven’t planned this whatsoever like I normally would when I take the family, I’m kind of thrilled about the idea of just roaming around on my own with no agenda, but I do want some good ideas of things not to be missed food or experience wise.
 
A lot has changed since you were last there! Epcot still doesn't have a ton of rides, so you can easily knock them all out in one day. I don't think any of them really jerk you around and cause back issues. If you get motion sickness, you probably want to avoid Mission Space orange and the new Remy ride spins a little bit. But your back should be fine on any ride there. Test Track and Soarin are my personal favs. As for food, if you are there the middle of this month, its likely you are there during one of you festival of the arts days, which includes several food kiosks. you may want to check out those menus, as there are some interesting vegetarian items.

I'd consider doing FutureWorld first and then heading to the World Showcase - it's so pretty at night and the lagoon show to end the evening is fabulous. I agree with the previous post that Mission: Space is the one attraction to skip if you are prone to motion sickness.

The only other ride in FutureWorld is Test Track, and is on the other side of the park

There are three "rides" in World Showcase - the lines for Frozen and Ratatouille are long
The food in World Showcase is probably the best overall food in the entire WDW parks - our favorites are Spice Road Table in Morocco and Teppan Edo in Japan.
