Help me decide

Alright, I always come to the DIS for help and I need help again! We were originally scheduled to go to WDW May 29-June 6, 6 of us (one an infant) staying POR. We were waiting to receive flight vouchers from the airline to book the air, needless to say they drug their feet. I finally got the vouchers today. However, airfare has risen $389. This is a tight trip, so that hurts pretty bad. If we cut one day off, however, the airfare won't cost us any extra. Our room and dining is paid for already, so with the day taken off, we could change our ressie to two rooms at ASSp for the same cost. But we loose a travel day. So, our itinerary would be:
Sat-travel
Sun-DS
Mon-MK
Tues-AK
Wed-Epcot
Thurs- h20 park and Epcot evening EMH (maybe, may be too tuckered out)
Fri-MK
Sat.-travel
We have 2 adults and 4 kids under 10, would that be too much? Or would we be OK? Should I try to pinch and save the extra airfare money to have the extra day or should I be happy with two rooms vs. one and enjoy 6 days in the park?
 
I think it sounds perfect - I'd save the money!

Of course I've never been longer than a 5 day pass, so I'm sure my opinion will be different than those who usually take longer trips.
