help me come up with Itineary for a our 8 day trip:) and also a journal

We are leaving on 26th driving down to disney. and I want to come up with a intenierry. i wrote some things done like what rides all of us us can go on and what rides only 5 yr old can go on and what rides both 2 yr old and 5 yr old can go on and what rides 1 yr old can join on. But also want to be able to journal on our road trip down. but never been a journaling type person or a itinerary type person so a itineary template would be great and also journal templates for a our journey of our roadtrip. anyhelp ladies. we are leaving the 26th

My only advice with a 2 and 5 year old (at a busy time of year) is to make a very basic intineray of must dos and then THROW THE ITINERARY away Seriously, WDW with toddlers/preschoolers is best done when you understand that there is NO WAY you'll get everything accomplished because even if there wasn't a single line to contend with....they will want to ride Buzz 35 times in a row and to avoid a public temper tantrum...you'll allow them to do it
