Help me choose a resort

This isn’t your typical vacation. I need a 2 day get-a-away to get some business stuff done, including writing content, watching videos, and preparing for opening a new business. I will be traveling alone.

I would like to be able to get to Disney Springs and a convenience store (water, juice, fresh fruit). Sitting by the pool and walking around for breaks are important also.

I would like a hotel room with a balcony and a dedicated desk/table. This doesn’t have to be within Disney. I’m open to Disney Springs and the Swan or Dolphin.

I would go with a Disney Springs resort. I haven’t stayed there but the Hilton Buena Vista Palace fits your requirements. They even have a nice ergonomic desk chair.
 
This doesn't meet your specific requirements, but a great place to get work done would be the cabins at Fort Wilderness.
