Help! I've got 3 HUGE zucchini. What do I do???? :)

I've never cooked much with zucchini, so I'm not sure what to do. I'd rather not make zucchini bread, since I'm the only one here who would eat it and I don't need those calories! Thanks for any suggestions!!
 
I like to slice them length wise, brush with olive oil, sprinkle some seasonings (thyme, basil and oregano) and grill. Then top with mozzarella cheese and let it melt a bit. YUM.
or

Cut it into bite size chunks and stir fry in olive oil with the above seasonings or garlic until soft. Or roast it in the oven along with some other veggies. (Fix it the same way, just put it in a roasting pan)

You can either leave the skin on or peel it, whichever you prefer.
 
I love zucchini on the grill. I slice it length-wise, brush with olive oil, put on a little salt and pepper and throw them on the grill. Throw on a steak or some chicken while your at it, and you have dinner!:thumbsup2
 
Hmmm--you can slice it into large coins or lengthwise slices and grill it on the barbecue. You can dice it and put it into salad. You can put it into ratatouille with tomatoes, onions, eggplant and spices (my fave version calls for grilling all the veggies first). You can saute it with onions.
It is pretty versatile, but the problem with really large zucchini is that they have a lot of seeds and are quite stringy, so you have to work around those defects--deep frying slices of zucchini from a really big zucchini is not a good idea.
Alternately--you can always use a really big zucchini as a target for lawn darts! I've seen people do this towards the end of summer, when everyone has had it with zucchini.
 

I love it in marinara sauce, too.

Oh, and veggie soup.
 
I use the huge ones to make beef stir-fry, sometimes I just make veggie stir-fry! Yummy! I also add other fresh veggies and serve over brown rice. My DS loves it and eats all the vegetables. He even requests the veggie only style :thumbsup2
 
Oooh, thanks for the new ideas. We've gotten tons of zuchinni and I've resorted to slicing or shredding it and storing in the freezer. You can't eat zuchinni bake, fried zuchinni and zuchinni bread every day. Don't know why I've never bothered to look for alternative/healthier recipes... :lmao:
 
Slice it into sticks, dip in egg white, coat with Italian breadcrumbs and a sprinkle of chili powder and bake at 400 until crispy. SO GOOD!
 
I like to peel it and cut it into small-ish pieces, saute in a little bit of olive oil until it's tender. Drizzle a little bit of sesame seed oil on it, sprinkle on some sesame seeds and eat with rice and a little soy sauce. Sometimes I dip it in peanut sauce too, if I have any (like you get at Teppan Edo).
 
You can try thinly sliced, sauteed in oil then laid out on a baking sheet and sprinkled with Parmasan cheese and baked. The whole family eats these little morsels of yumminess!

You know that stuff that goes inside of cabbage rolls?
cut the zuchinni, long way in half.
Use the meat , tomatoe and rice mixture as a filling. Top with cheese and bake for um. 30 minutes or until the cheese is all bubbly., :thumbsup2
