Help! First trip for family, need guidance

We are trying to plan a suprise trip to Disney for our children, daughter 9, son 8, Thanksgiving week 2004. Neither of us have ever been to Disney. Would love for those of you with Disney experience to help us mold our trip so that we don't miss those must see, must do events. All comments welcome.
