Help First time Dining Itinerary

Hello everyone I am going to disney for the 2nd time ever in February 2014 :banana: SOOOOO EXCITED!!! It will be just my mom and I and we are doing the deluxe dining plan, staying at the business level at the coronado springs resort. I would love some feedback from you guys on our itinerary.
Sunday: arrival, Downtown Disney and Boardwalk
Dinner- Yachtsman steakhouse
Monday: Hollywood Studios
Lunch- Hollywood Brown Derby (with fantasmic package)
Dinner- Jiko
Tuesday: Animal Kingdom
Lunch- Tusker House
Dinner- Victoria and Alberts (chefs table or queen victoria room)
Wednesday: Magic Kingdom
Breakfast- crystal palace
Lunch- Be our guest
Dinner- California Grill or Citrico's or Flying Fish
Thursday: Epcot
Breakfast- Akershus Princess breakfast
Lunch- snacking and drinking around the world
Dinner- Monsieur Paul
Friday: departure
Breakfast- Kouzzina
Lunch- Garden View Tea room

What a list! Made me hungry just reading it. Wow!
I will go eat, come back and see if I can find anything I would change, but as for now I think I'll just change my reservations to match yours.
