Help? Explain DL for a beginner.

I just realized a couple days ago I have a couple vacation days left this year and with the days I will have off for Christmas we can squeeze in a quick 3 day trip to DL. It's our 1st time. So far I have the time booked off and a reservation made at the Sheraton Park hotel as I have starpoints and could book it for free and it seems like it's supposed to be close.

I know it's supposed to be one of the busiest times of the year. I think we will just try to do as much as we can do and not be disappointed about anything we can't do. We've been to WDW and the plan is to do things we haven't done at WDW and then if time allows to do things we've done at WDW but really enjoyed. We want to do a chacter meal or something special on Christmas day for sure. Maybe even a 2nd meal if it works out.

It seems like there's just so much more info about WDW than there is DL. Can someone explain the basics to me? How far in advance do you make dining reservations? Is the World of Color package the way to go? Who has the best touring plans? Where do I find crowd predictions and hours? What do I need to know to make this trip as fun as possible?
 
Its good to want to try all the rides at DL that aren't at WDW. But don't forget that some at DL are very different than WDW.

Space Mountain at DL for instance is far superior to WDW's version. You sit side by side, sound is in the cars similar to RockNRoller, track is rather smooth unlike the harshness as MK's and the effects are much better.

Pirates at DL is considerably longer and has two long drops that can get the front seat guests a bit wet.

Fantasmic is a better show at DL although seating isn't as convenient.

Small World is somewhat better inside but its the outside thats a huge difference. Memories and You is done on this building rather than the castle as is done at WDW.
