Has any DIS'er ever made meatloaf in their crockpot?

I know there's a crockpot sticky thread on the cooking board, but it doesn't get much action..was wondering if any of you have ever tried making meatloaf in your slow cooker, what were the results, and do you have a tried and true recipe?...thanks in advance
 
I have. I just made it like I would normally make it for the oven. I started it around 10 am had it on high till noon and then turned it to low till I got home at 3, then I turned it high again until it was done. It came out good except it was very greasy and not as easy to drain the grease like would have been if it was in the loafpan.

that's what I was afraid would happen if I tried it..I wonder if you can put like a cake cooling rack inside the crockpot for the meatloaf to 'drain on'?...
 
Put some large chunks of onions, carrots, or celery on the bottom of the crockpot. That way the meatloaf is not sitting down in the grease. They will also add to the flavor of the meatloaf.

I should have thought of that..I was just watching Paula Deen on Food Network, she's making a bacon cheeseburger one now..and she set hers on top of slices of white bread..that would probably make a mess in the bottom of a crockpot though..lol!
 
Hhhmmm, interesting. So do you just put the "glob" (I know, appetizing) of meat mixture in the crockpot? I like the idea of the big onion chunks too. Does the outside still get "crunchy"? I like the baked crunchy edges.
 
crockpot meatloaf is the only way I make it now :) I put a few large carrots on the bottom so that the meat doesn't sit IN the fat as much. I also make 2 aluminum foil "lifters" that I set the meatloaf on. This makes it easer to take out of the crock.
 
yep, I only make it in the crockpot now. I do the aluminum foil balls or potatos at the bottom to keep the meat up. I also use the crockpot liners for easy cleanup. Here's my recipe:

1.5lb ground beef
¼ cup chopped onions (I chop them small)
1 tsp. salt
¼ tsp. pepper
A little garlic powder
1 ½ -2 cups of Italian seasoned bread crumbs
1 egg
¼ cup of milk

~First, beat the egg and milk together in a bowl. In another bowl put the beef, everything else and dump the egg and milk over it. Mix it together really well and shape into a loaf that is at least an inch smaller than the inside of your crockpot.
~Then I chop up about 6-8 potatoes in cubes, toss them in the bottom of the crockpot, so they are cover the bottom, Toss some chopped onions over it. I usually add a little salt and pepper then. Then I put some baby carrots on top of the potatoes.
~ Put the loaf on top of the potatoes and carrots and then spread some ketchup on top of the meatloaf.
~Cover. Cook on high for 1 hour. Reduce heat to Low and cook 7-8 hours. Don’t lift the lid, just let it cook.

I make this size in my 4qt crockpot for DH and I.

No, I don't think meatloaf in the crockpot will get crunchy. It's a trade-off - convenience for crunchy bits of meatloaf. Hmmmmmm...................... Weigh your options carefully!;)
 
My DH saw this on TV yesterday but instead of putting veg on the bottom of the crock pot you used shredded hashbrowns.

Mix a 1/2 can of chedder cheese soup with evaporated milk, mix with your the meat. Place meat on top of the defrost hashbrowns. Make sure the meat doesn't touch the sides of the crockpot.
Mix the rest of the chedder cheese soup with a can of mushroom soup, spread it over the top of the meet. Add slice onions and slice mushrooms on top. Cook on low for 6 hours.
I'm going to try this on thur...:)
