Well, Gabby's day started at 5am. She was up showered, dressed, loaded, and on the road to the airport. She is flying 5-1/2 hours across the country today to Oregon City, OR.
My day started around 9am. I am on a quest to finish off the leftovers. Gabby rarely eats any leftovers, so when she is home, the Sunday that she travels is my day to experiment in the kitchen. Today's experiment, what to do with 3 kinds of Irish cheeses, boiled cabbage, stale corn muffins, and baked ham. I have an answer in the works. I found the recipe below. I figure that I can serve it with ham and have dinner every night until she comes home.
Cornbread-Cabbage Casserole
1 hour 15 min prep
5 cups coarsely chopped cabbage
2 tablespoons margarine or butter
2 tablespoons flour
1/2 teaspoon salt
1/8 teaspoon black pepper
1-2 clove garlic, minced
1 1/4 cups milk
1/2 cup chopped red bell peppers or yellow bell peppers or green bell peppers
1/2 cup shredded cheddar cheese
1/4 cup chopped onions
4 cups prepared cornbread, crumbled
Preheat oven to 375 degrees.
In medium saucepan, cook cabbage, covered, in small amout of boiling, lightly salted water for 5 min.
,then drain.
In same saucepan melt margarine or butter.
Stir in flour, salt, pepper, and garlic.
Add milk.
Cook and stir over medium heat until thickened and bubbly.
Stir in bell pepper, cheese, and onion.
Stir until cheese is melted, then remove from heat.
Place 3 c.
of cornbread in 2-quart casserole dish.
Top with cooked cabbage, sauce, and then remaining 1 c.
of cornbread.
Bake, uncovered, for 30-35 minutes or until heated through.
If the cooked cheese sauce was an indication....OMG, this is going to be yummy! Other than finding creative uses for leftovers, I have a quiet day planned. I love Gabby with all of my heart, but the woman sure knows how to make a lot of noise. It's nice to have some quiet......of course by tomorrow the quiet will be a lonely sound that makes me sad, but for today, it's nice. The big guilty pleasure of the day will happen tonight.....L Word season premiere!
