You stole my idea LOL but I'll expand with a recipe.......
cook it up like you would for tacos and just as it's done, add a can of enchilada sauce (if your store sells La Victoria brand, get that one) and let it simmer for a minute or so.

Add any filling you like (cheese, lettuce, sour cream or whatever) and enjoy. I myself like them with just cheese, but that's me. DW adds sour cream and sometimes tomatoes (when they're not $87.00/lb
