I bought two packages of ground andouille sausage at the store today as part of a "pick six" deal. I thought it might be interesting....

But I can't find any recipes for GROUND andouille (as opposed to the kind in casing). Any tips on ways I can cook with it?

Just about any recipe that calls for ground meat/sausage should work with the andouille.

Yep, we use loose sausage occasionally. Use it in a tomato sauce over pasta; baked in a casserole with eggplant and zucchini; sautéed with garlic and broccoli rabe; etc.

The recipe websites might not have any suggestions for ground andouille, but there should be plenty for ground Italian sausage. Just substitute.
 

I use it 50/50 with hamburger when I make chili.

Yes - if I had a bunch of it to use I'd 50/50 it with hamburger for any recipe calling for ground beef. Things will taste a "little different" but hopefully in an interesting way. (Taste before adding any additional garlic or "hot" spices though.)
