Maybe YOU couldn't, but Jerry Garcia, along with the Grateful Dead, were and still are a HUGE influence on American music. That is fact, not opinion.

They were the founders of the Jam band genre. The Wall of Sound was specifically created for them. They toured nonstop for 30 years (2,500 concerts at least) with a HUGE cult following that continues to live on today. The Deadhead community that they created was and is unlike any other musical following. Jerry's guitar playing was among the best and he served as an influence for many musicians today.

Jerry Garcia and the Grateful Dead will live on as one of the most legendary bands ever. When he died, the band died, as he was the prime figure. It's been almost 15 years since his death and I still hear people mourn his death when they hear his music as if it were yesterday.

I don't mean any disrespect at all. It just confused me that the OP was questioning Jerry Garcia as an option.

Frank Sinatra, Johnny Cash, Elvis Presley, The Beatles, Queen (Freddie Mercury), Michael Jackson...I think they all created good music.

I agree with every single one of your choices. I would also add the rest of the Rat Pack and Bob Dylan (I'm surprised he hasn't been mentioned ) to that list. Also, I'd add Ozzy Osbourne, Judas Priest and Iron Maiden because of everything they did for the heavy metal scene. (<-- he's headbanging, not bowing )
