Great "last night" meal

We can only afford to go to Disney every three years or so, so we want to start our trip with the high energy Disney-fun of Chef Mickey's, which really gets us in the Disney spirit and state of mind. We'd like to end it with something just as special. Maybe a Magic Kingdom restaurant followed by the fireworks or something. I'm a little stumped. I'd love to hear some ideas.

Do you have a "last night" tradition? Where do you eat your last Disney dinner?
 
For this trip, we're doing CRT on our last night. Not so much because it is all that special, but because DD is getting a full BBB makeover before that dinner and I know she'll like it if her hairstyle lasts till we come home, so we planned that for our last full day.

Have you thought about doing a signature dinner with a view of the fireworks? We have both Narcoosee's and California Grill planned for our next trip, and I'm planning on getting ADRs to coincide with fireworks times. We also have a dinner planned at Ohana, so that we can catch the fireworks from the Poly beach. My kids love fireworks, but not the crowds, smoke and noise, so I'm thinking that fireworks dinners will be the perfect compromise.
 
For our last night we normally do Narcoosee. During or after dinner you can go on the boat dock and see Wishes. You can also see the Electric Light Water Parade come out.

Narcoosee is a really nice place to eat with a very good menu. It is also cool walking around the GF too.
