Great gluten allergy server on the Fantasy needed

My daughter and I both can't have gluten. Can you suggest a server or head server who understands gluten allergies on the Fantasy. Our first cruise on the Wonder was a disaster when we didn't have an understanding serving team, our second cruise on the Wonder we requested a known allergy server and the experience was fantastic. Please let me know who you've had luck with, we are headed out on a B2B Aug 22.

Also, if your server is not knowledgeable or you have an issue, talk to the head server. And if he/she aren't helping, escalate. Disney is great with service, they usually will make things right, but you have to tell them there is an issue.
