I just flipped to the food network and caught the last 2 minutes of what looked like an AMAZING grapefruit cake with cream cheese frosting and I was saying to my fiance "OMG! where is that cake made? we have to go there and try it!".... well, it said it was made somewhere in WDW.. Magic Kingdom I think... but we missed the actual restaurant where you can get it at...

anyone know anything about this or where to get it?!? I have to get a slice in September when I go! thanks!

:thumbsup2

It's at the Hollywood Brown Derby at MGM :) If you want to try the cake without eating at the Brown Derby, there is a cafe at MGM called Starring Rolls where you can get it too

It IS delicious, in an unsweet way. I had it at the BD last fall and brought home the recipe and made the cake. Don't use reduced fat cream cheese, LOL. Only the real stuff. Pretty easy to make with ingredients found in any supermarket. Do a google search and you'll find the recipe.

thank you Lindy! Unfortunately we aren't going to MGM on our trip this time... we could only do two parks and are doing MK and AK... so I told my DF .. "you know what that means?!"... to which he rightfully answered...

"we have to take another trip to Disney, right?" haha.

I'm breakin the man down! :thumbsup2 :cool1: pirate:

(or I guess I could just find the recipe and make it myself.. but what fun would that be? lol )

Here is the reciepe, I got it from allears.net I get alot of receipes from there when I need a disn;y fix when I'm not at WDW.

Ingredients:

1 1/2 cups sifted cake flour
3/4 cup sugar
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/4 cup water
1/4 cup vegetable oil
3 eggs (separated)
3 tablespoons grapefruit juice
1/2 teaspoon grated lemon rind
1/4 teaspoon cream of tartar

Method:

1. Preheat oven to 350º F. Sift together flour, sugar, baking powder, and salt into mixing bowl. Make a well in center of dry ingredients.

2. Add water, oil, egg yolks, grapefruit juice, and lemon rind. Beat until smooth.

3. Beat egg whites and cream of tartar separately, until whites are stiff but not dry.

4. Gradually fold egg whites into the cake batter, folding gently with a rubber spatula until just blended. Do not stir the mixture.

5. Pour into an ungreased 10-inch cake pan. Bake at 350º degrees for 25 to 30 minutes, or until cake springs back when lightly touched with a finger. Invert pan on cake rack until cool. Run spatula around edge of cake. Carefully remove from pan. With a serrated knife, gently cut layer in half.

Grapefruit Cream Cheese Frosting

Ingredients:

2 six-ounce packages of cream cheese
2 teaspoons lemon juice
1 teaspoon grated lemon rind
3/4 cup powdered sugar (sifted)
6 to 8 drops yellow food coloring
1 one-pound can grapefruit sections (well-drained), reserving 2 tablespoons of juice OR 3 fresh grapefruits, peeled, sectioned, and drained, reserving 2 tablespoons of juice.

Method:

1. Let cream cheese soften at room temperature. Beat cheese until fluffy.

2. Add lemon juice and rind.

3. Gradually blend in sugar. Beat until well blended. Add food coloring.

4. Add reserved grapefruit and blend into frosting.

5. Divide the frosting evenly into two bowls. Roughly chop 2/3 of the grapefruit sections and add them to half the frosting. Spread this mixture on the bottom half of cake. Top with several grapefruit sections. Cover with second layer of cake. Frost top and sides. Garnish with remaining grapefruit sections.

it's called Amusement Park Eats.. set to run again next Saturday at 4 PM EST, assuming it's the same episode and not a series (it's not tagged as being a disney show like the first one was, but that's subject to change)

Grapefruit Cake

from the Hollywood Brown Derby
(serves 6)
1 1/2 cups sifted cake flour
3/4 cup sugar
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/4 cup water
1/4 cup vegetable oil
3 eggs (separated)
3 tablespoons grapefruit juice
1/2 teaspoon grated lemon rind
1/4 teaspoon cream of tartar

Preheat oven to 350 degrees. Sift together flour, sugar, baking powder, & salt into mixing bowl. Make a well in the centre of the dry ingredients. Add water, oil, egg yolks, grapefruit juice, & lemon rind. Beat until smooth. Beat egg whites & cream of tartar separately, until whites are stiff but not dry. Gradually fold the whites into the cake batter, folding gently with a rubber spatula until just blended. Do not stir the mixture. Pour into an ungreased 10-inch cake pan. Bake at 350 degrees for 25-30 minutes, or until the cake springs back in the centre when lightly touched with a finger. Place the pan on cake rack until cool. Run spatula around edge of cake. Carefully remove from pan. With a serrated kinfe, gently cut into two layers. After cutting the cake in two, slide a flat cookie sheet between the layers to lift the top one off; after frosting the bottom layer, simply slide the top back on.
Grapefruit Cream-Cheese Frosting

2 six-ounce packages cream cheese
2 teaspoons lemon juice
1 teaspoon grated lemon rind
3/4 cup powdered sugar (sifted)
6 to 8 drops yellow food colouring (optional)
1 one-pound can grapefruit sections, well drained, reserving 2 tablespoons juice; or 3 fresh grapefruits, peeled, sectioned, & drained, reserving 2 tablespoons of fresh juice.
Let cream cheese soften at room temperature, then beat until fluffy. Add lemon juice & rind. Gradually blend in sugar & beat until well blended. Add food colouring, if desired. Add reserved 2 tablespoons of grapefruit juice & blend. Divide the frosting evenly into two bowls. Roughly chop 2/3 of the grapefruit sections & add them to half the frosting. Spread this mixture on the bottom layer of the cake. Top with the second layer of cake & frost the top & sides with the remaining frosting. Garnish each portion with a grapefruit slice.

incidentally, it probably has changed since that recipe has been made public, but recipes aside, they actually demonstrate creating one on the show and it's quite a bit different (it's 4 layers and each layer is sprayed with some grapefruit juice/sugar solution so the cake itself absorbs the flavor).

bump! I wanna make sure I remember to watch the show this saturday.. thanks!
