Gotta have Mickey's recipe

for the pasta dish at Chef Mickey's dinner buffet. It has penne paste and peas, other veggies with a white sauce. Its to die for. Does anybody know of a link for Disney recipes?

BTW--we LOVED this character dinner. It was our absolute fav!
 
This isn't Chef Mickey's recipe, but it might be close.

SPOODLES FETTUCCINI WITH PROSCIUTTO AND PEAS


Yield: 2 servings.


1/2 pound uncooked fettuccini noodles
2 tablespoons unsalted butter
2 tablespoons finely chopped shallots
1/4 cup white wine
1 cup heavy cream
1/2 cup plus 2 tablespoons freshly grated Parmigiano-Reggiano, divided
1/4 pound julienned prosciutto ham
3/4 cup sweet peas
Dash kosher salt
Dash freshly cracked black pepper


1. Cook pasta according to directions on the box. Chill in ice water. Drain thoroughly and set aside until ready to use.


2. Place a medium-size saute pan over medium heat. When pan is hot, add unsalted butter to pan to melt. When butter is liquid and hot, add shallots and saute for 1 minute or until shallots begin to brown.


3. Deglaze the pan with white wine and let reduce in volume by half. Add heavy cream and let simmer 1 minute. Reduce heat to low and add the 1/2 cup Parmigiano-Reggiano, stirring until the cheese melts. Add salt and pepper. Add the prosciutto and peas to the pan.


4. When mixture is hot, add cooked pasta to the pan and toss until all ingredients are well-combined. Pour onto platter and top with 2 tablespoons Parmigiano-Reggiano and additional black pepper.
 
OK that last recipe might not even be close to the one you had at Chef Mickey's, but this one (if you switch the pasta type) might be a closer match.

Farfalle Primavera
Portobello Yacht Club

8 oz. Farfalle pasta
2 oz. Snow peas
2 oz. Asparagus (sliced)
5 oz. Heavy Cream
2 oz. Grana or Parmigiana-Reggiano Cheese
1 oz. Butter
1 oz. Tomatoes (diced)
Freshly grated Parmesan cheese to taste
Salt & pepper to taste

In a large saucepan of boiling salted water, cook the pasta for 8 to 10 minutes or until it is al dente, and drain it well. In a medium saucepan, heat the butter until melted, add the snow peas and asparagus and cook for one minute. Add cream, cheese and pasta and simmer until sauce thickens and mixture is combined well. Finish with a sprinkle of salt and pepper and Parmesan cheese to taste. Serve garnished with tomatoes. Serves 2.
Enjoy with a bottle of California chardonnay.

Sorry...just checked my Cooking with Mickey and the Chefs of WDW Resort Volumes I and II and the recipe isn't there.

:rotfl: I should just keep quiet and take credit, but... I copied and pasted those Disney recipes off of other web sites. They do look pretty good, don't they?
