Had to book my port adventures at midnight and Cozumel I don't even see what I want yet it's advertised on Disney's website(CZ15) and grand cayman the dolphins are sold out. Sucks for the kids but I'll be fine as long as I have some beers

Check daily as it gets closer and people start cancelling stuff.

The website shows stuff that has been available in the past, not necessarily the contracts they got for this season. We ran into this with horseback riding in Skagway. The stables had a lot of health issues with the horses (which is kind of a red flag anyway) and even on sites like Viator you couldn't schedule it.

The dolphins are kinda meh. You want to do the stingrays in Cayman, trust me. Or, depending on the age of your kids, the Turtle Center is good for little ones.

Book 3rd party, it'll probably be cheaper and they will work really hard to make sure you are back in plenty of time- no one wants a bad review.
