Good time to go next year?

So I came back from this May's WDW vacation basically wanting to do WDW all over again, but I should probably wait a bit :). So I was wondering if there's some good times next year.

All I've done so far is April or May trips, given slightly better weather (which is still awful; much too hot) and breaks in the crowds. January & February seem to have some promising gaps, so I was wondering if anyone had done some winter trips.

Galaxy's Edge will be open by them, which I'm assuming will make hotels and other things harder to come by. However, that typically leaves other parks more open for fun. Is the winter a good idea, or should I wait a few more months?
 
I would go in the fall. Either mid Oct or the Second week in Nov. The first week of Nov is always a race week and Jersey week which means room sell out fast so you will want to avoid that week. While everyone will be at Galaxy you can go over and check out food and wine. Plus that gives you over a year to save.
 
Thanks for responding :)! That's far away though, lol. I came back from this May's vacation wanting to go immediately back, and it's already too late to book fall stuff six months in advance (no dining reservations!). I'll think about it, though!
 
While I have an AP, when I did a week trip and stayed on property with the fam, I ended up going during January during the non-race period / not near MLK weekend. As that seems to be the less busiest time of the year generally, besides perhaps Feb during the non-race week times.

I like the cool weather and I'd rather be too cold than too hot. At least I can wear a jacket to protect myself. With hot weather there isn't too much you can do. Also, depending on what time of the month it is, you might have a moment where you'd not even have to wear a jacket, but just a long sleeved shirt.
 

We typically go at the end of January between the marathons and holidays of those months. The temperatures are nice, but you will need a jacket for early morning and at night. The crowd levels are not less, so do not plan regardless of what crowd level plans say. There is no longer a down time at WDW.

Some fall dining reservations are still available, especially if you're not trying for the very most popular restaurants.

Do they change up the character costumes in the winter-time? I've seen pics of characters in their "winter gear" at times, but I'm not sure where that's from. It's always weird in California to see Ariel in her "body-stocking" get-up when it's like 25 above to a Canadian like me :).

I'm not sure anything in Florida counts as "jacket weather" to me unless it's actually raining, but I've heard some Canadians complain of the cold, so I'll take that under advisement.

I figure that the winter will still be a LITTLE busy, though I feel that May this year was busier than the April I went in 2015-ish. Galaxy's Edge will through a massive wrench into things, though- maybe all the parks will be empty with everyone at Hollywood Studios? Or maybe the run-off from that will make the rest of the parks busier? It's a bit unprecedented.
