It sort of depends on what you are looking for, and how much you want to spend. The California Grill and Flying Fish are amazing - but pretty pricey. There are other unique places to eat at Disney that aren't as much money, but are still fun little gems. If you include exploring a hotel as part of the fun, several of the QS places are great.
It can be fun just to go the Gasparilla Grill at GF. For the price of QS - you can sit at a quiet location with a view of the castle. I haven't been there during fireworks, but you can sort of hear the audio from the MK, and you can hear the train whistle and watch the monorail. After all the noise of WDW for a week, this quiet retreat is nice. It's not spectacular, but I liked it better than the QS at either of the other monorail eateries.
GF also has 1900 Park Fare for a character meal. hmmm....Considering the new pricing policy, I'd say this is better than the Cinderella breakfast at the castle. The meal was pretty hectic, and not cheap (but then the castle is even pretty expensive, too.) But entering the GF dressed as a princess is a pretty cool thing for a little girl! And the food was pretty good, and where else can a girl meet Prince Charming? If you are collecting signatures, I think his is pretty hard to find elsewhere.
We liked Whispering Canyon for breakfast. I think it would also be fun to go there for other meals as well. When you are done, you can explore WL - the geyser, the boat ride to contemporary (This little boat gets a great view of the fireworks! We timed it to see the
MVMCP fireworks, Epcot, and the water parade - in one trip. It was AMAZING - and free!) Plus the CM was fantastic!
The food court at CSR has good food, and a Mexican theme. If you crave Mexican food while at WDW, this is probably your best bet. They also have non-Mexican food too - including good pizzas.
There is Chef Mickey's for Character dining.
At DD, there is HOB, Rainforest Cafe, and we like the little Wolfgang Puck place - the inexpensive one. I guess I like eating outside, and the food there is good for the price. The breakfast pizza is really good! We weren't as big on Bongos. Some of the other places seem too pricey, though I understand some are worthy.
Another hidden gem is taking the boat from DD to Saratoga Springs. You have to navigate the DVC property a little, but it is fun to explore. The eatery there has great flatbread pizzas, sandwiches. They also had decorate your own cookie, and you can color while you wait for your food on big easels. It was bright and cheery, and very reasonably priced.
But then again, it depends on what you are looking for in a meal...
