Good meatloaf recipe?

Does anyone have a good recipe for meatloaf? My kids never liked the meatloaf I made, so I stopped making it.
I want to try again and would like some different recipes to try.

This is my favorite and it even freezes well!



BBQ MEATLOAF

2lbs. Ground Sirloin
1 box Stove Top Stuffing (Chicken flavor)
1c Milk
½ c BBQ Sauce
2 Eggs

Mix all ingredients and let rest for 20 minutes. Mix again and mold into 2 loaves. (Freeze one, if desired) Bake in a covered casserole dish at 375 degrees for 1 hour. (I add a bit of water to the dish to keep the loaf moist as it bakes)

Optional: Top with more BBQ halfway through baking.
 
This is how I make it; my kids love it though they like it better with brown gravy than ketchup. Also, we love this leftover, and there are so many of us, so I make a double recipe in a 9x13 rather than using a loaf pan.

1 c. tomato juice
3/4 c. Quaker oats
1 egg
1/4 c. chopped onion
1/2 tsp. salt
1/4 tsp. pepper
1 1/2 lb. lean ground beef

Preheat oven to 350 degrees. Combine all ingredients except ground beef. Mix well. Add ground beef, mix lightly but thoroughly. Press into 8 x 4 inch loaf pan. Bake 1 hour. Drain, let stand 5 minutes.

I can give you a disney cookbook one that everyone has loved!
I no longer make it were as I do not eat meat, but if this was put in front of me....I just may! lol

Meat Loaf:

2 pounds lean ground beef
2 eggs, beaten
1 cup rolled oats
1/2 cup chopped onion
1/2 cup catsup
1/4 cup chopped green pepper
2 tablespoons steak sauce
1 teaspoon black pepper
1/2 teaspoon salt
1/2 teaspoon basil
1/2 teaspoon garlic powder

sauce:
1/2 cup catsup
3 tablespoons packed brown sugar
1 teaspoon ground mustard


preheat oven to 350 and grease loaf pan. in large bowl combine the ground beef and eggs.
add oats, onions, catsup ,pepper ,steak sauce, black pepper ,salt, basil, and garlic powder and transfer to the loaf pan and smooth top.

in small bowl whisk the catsup and brown sugar, mustard together.
then spread it over the meat loaf before baking.
bake for 1-1 1/2 hours or until reaches 165 degree's

I also would throw a slice or two of bacon in top.

this is a very easy recipe and in my disney book! I would also cut most of this recipe in half for a smaller size!

I use ground beef, canned bread crumbs, egg, and World Harbors Sweet 'n Sour sauce (the one over-the-top HFCS item I just cannot give up! - But I don't make meatloaf very often.) I bake it in a loaf pan at 350° for a little over an hour, pouring a little extra sauce on top before the last 10 or 15 min.
 
This was my grandmother's recipe and I have been making it for 33 years. It was the first meal I ever cooked for my husband and it's still his favorite. Our son has passed it on to all his friends and they love it too.

1 lb. ground meat
1 envelope Lipton's Onion-Mushroom soup mix (or the plain Onion)
1 small can evaporated milk
1 small can tomato sauce
bacon strips, cut into thirds or fourths

Gently blend meat, soup mix, milk, and 1/2 of the can of tomato sauce in a bowl. Transfer into a loaf pan (mine is Pyrex). Pour the remaining tomato sauce over the top. Lay bacon strips on top. Bake at 350 degrees for one hour. Carefully pour off accumulated grease and place back under the broiler for a minute or two to crisp up the bacon.

Try it, you'll like it!
 
Lipton Souperior Meat Loaf is the one my MIL uses and I think her's is the best.
 
I used to DESPISE meatloaf. Would never eat it and even talked myself into thinking I was allergic to it bc I actually would throw up if I took a bite. LOL - I was a picky eater! But a few years ago someone at work brought in some meatloaf and it smelled amazing. It tasted even better. I now make it all the time. My parents about die of shock that I eat it so much bc of my aversion to it for 33 years!!

It's an Italian Rolled Meatloaf. Don't have the specifics here at work, I could add them later if anyone is interested. Ground meat, pepper, garlic powder, Italian Style bread crumbs, marinara sauce, egg, and Parmesan cheese all mixed up. The flatten it out in pan. Take shredded mozzarella cheese and fill down the middle. Then roll the meat into the loaf shape so that the cheese is in the center. Then cover with marinara. Cook - about 10 minutes before it's done put more cheese on the top. It is TO DIE FOR. Tastes like a huge meatball parm!! :banana::banana::banana:
 
I have never made it so I don't have a recipe but the best meatloaf I ever had was make with bison.

2lbs lean ground beef
1 box stove top stuffing mix (I use whole wheat)
2 eggs beaten
1 cup water
Mix all ingredients, I usually make it in muffin pans, it cooks quicker and freezes well. And it makes WW points easier to figure out. lol.
I top mine with brown gravy before baking, and then serve with brown gravy drizzled over it
 
loaf:

1 lb. ground beef
1 cup seasoned bread crumbs
1/2 can tomato sauce
1 egg
1 tsp. black pepper
1/2 tsp. salt

mix and bake in 350 degree oven for 1 hour.
drain (if needed) and pour sauce over loaf and continue to cook for 30 additional minutes.
1 1/2 hours total

sauce:

1/2 can tomato sauce
1 tbs. mustard
1 tbs. brown sugar
1 tbs. vinegar
1 cup water

Very tasty and my kids and husband loves this. DH even said mine was better than his mother makes :thumbsup2.
 
3 tablespoons butter
3/4 cup each of finely choped onion and scallion
1/2 cup finely chopped carrotts
1/4 cup finely chopped celery
1/4 cup chopped green bell pepper
1/4 cup chopped red bell pepper
1 teaspoons minced garlic
3 eggs, well beaten

1/2 cup ketchup
1/2 cup half and half
1 teaspoon ground cumin
1/2 teaspoon ground nutmeg
1/4 teaspoon cayenne pepper
Salt and Pepper....to taste
2 lbs. ground beef chuck
12 ounces ground sausage
3/4 cup fine fresh bread crumbs, toasted


1. Preheat over to 350 degrees.

2. Melt the butter in a heavy skillet, then add the onion, scallion, carrots, celery, bell peppers and garlic. Cook, stirring often, until the moisture from the vegetables has evaporated, about 10 minutes. Set aside to cool, then cover and refrigerate until chilled...at least 1 hour.

3. In a mixing bowl, beat together the eggs, ketchup, half and half, cumin, nutmeg, cayenne, salt and pepper. Add the ground beef, sausage and bread crumbs. Then add the chilled vegetables and mix thoroughly with your hands, kneading for 5 minutes.

4. Form the mixture into a loaf, approx. 12x5x2 1/2 inches on a baking sheet. Bake until cooked through for about 1 hour. (160 degrees on meat thermometer). Let rest 20 minutes before slicing.

This freezes well, so if you have a small family or small eaters you will get 2 meals out of this.

My Absolute Favorie is my Mother-in-law's

2lb 80/20 ground beef
1 package lipton onion soup mix
2 T Ketchup
1 T Mustard
2 T Milk
1 C Bread Crumbs
1 Egg.

Bake @ 350 for 40 minutes to 1 hour
