I'm still toying with the idea of going to WDW in early/mid June and combining that with Universal. Universal I get and can plan for since they still have express passes. Disney seems like such a wild card. With no FP right now, how many rides can one really assume to get on during a trip? Our main parks to hit will be DHS and AK. We will be there either 2 or 3 days and will add in a hopper we think just in case. I really want to go but I don't want to blow so much money and not ride things. So the question I ask is, on an average summer week day, how many things do you expect us to be able to get on at those two parks?

The thing about Hollywood Studios is showing up early, then having patience in the afternoon. Seems like even this week with more people at WDW due to the holiday, as long as you are there at or near gates opening, if you go to MMRR first, SDD second followed by TSM and AS2, you can get those rides knocked out in under 2 hours and that's half the rides. If you get an RotR boarding group in the 20s, you'll be called about the time you're done in TSL. If lower, you might be called before you're done, but you have an hour window to get back. If you're in the 30s, you can hit up mfsr then be almost up for rotr. If you're higher than that, maybe skip GE and head to Muppets or Star Tours if they're under 30 minute waits or head to ToT and RnRC.
Also, HS tends to thin out last couple hours, so you can usually catch a number of rides with less than 30 minute waits by then.
Animal kingdom is similar story, be there early, but here you don't necessarily want to hit the headline Pandora first. The other rides start off low waits for a couple hours before ballooning. If you start at dinosaur and work your way around, you can get all the rides besides Pandora knocked out in the first couple hours. Having the hopper is nice for your AK day as it usually closes so early. Heading to Epcot or MK after is just bonus park time.
If you want to get the best idea of ride wait times, check back spring break and easter weeks on the days of the week you'll be going and you'll probably get a better idea of what wait times will be in June.
