Gluten Free and Pepper Market

We are getting ready for our first stay at Coronado Springs! I was concerned about booking CSR since the restaurants are not owned by Disney. Typically Disney owned restaurants are great about providing gluten free options.

My daughter and I both have celiacs. Has anyone had experience dining at Pepper Market and having them accomodate a gluten free diet?

I've checked out allergy free mouse and gluten free dairy free wdw already. There is not a whole lot of information out there.
 
We stayed there last year and my boyfriend can't have gluten. The food court seemed just as accommodating as others we've eaten in, in other Disney resorts. He got a pepperoni pizza which is one of his favorite things to get from resort QS, and on another day he had bacon, eggs, and potatoes.

There were however no baked goods we could see anywhere that were made GF. A chef mentioned he could get some but nowhere knew what he was talking about since the little bakery didn't sell anything like that.

Las Ventanas was also really great for breakfast they could make anything on the menu for him even a french toast type dish. We didn't enjoy lunch as much but they were also accommodating then too.
