They also sell gingerbread men at the CS restaurant in the American Adventure during Christmas. They build a gingerbread house in the restaurant which opens to the outside. Just walk up to the window and buy them there.

They sell them at the Main Street Bakery and Goofy's Candy Shop in DTD...they are shaped like gingerbread men, not a cookie shape and they are wonderful

Last year we bought the shingle shaped kind at GF and did not like them, they had chocolate on the back of it and they were stale.
