My children each received a 50$ gift card for christmas to use in the ships shops. I've read a lot about people loading gift cards to their on board account. Do we HAVE to do this or are they able to go to the store and "pay" with their gift cards?

The shops onboard accept Disney gift cards (or at least used to as recently as last October). But any other items onboard that you child may wish to purchase (smoothies, for example) must be charged to the room card.

You can go to Guest Services and have the gift cards applied to the onboard account, also, if you wish.
 
No, you don't have to load it to your account. DCL currently accepts gift cards at the ship shop (say that three times). Since they received the gift card to use in the shops, that will work out perfectly.
