Getting something not on the menu...possible?

How accommodated are the counter services at WDW? Would they accommodate your special request??

I was checking out the menu at Tangierine Cafe. My kids would love to eat the Moroccan bread and hummus. But that combination is not on the menu. Is it possible to ask them to make a side dish for me with the bread and hummus and charge me for a snack credit from my dining plan??

Not likely. If it's not on the menu they may not have the ingredients in the kitchen.
 
They probably have a side of pita and hummus. If not, you can find it at most QS in the resorts.
 

With a quick service place it's kind of hard to have them put together something they don't have a key for on their register and charge you a snack credit for it. They maybe could ring it up as something else. Depends on how flexible they are allowed to be - which with a quick service, is probably not very flexible. Keep in mind that this is not a Disney-operated place and they tend to be stricter with what they can and cannot do regarding the dining plan.

As others noted they may be able to accommodate your request but likely you will have to pay OOP for it.
We have ordered a grilled ham and cheese (hold the ham) and paid the same price.
We have ordered an adult sized kids mac n cheese and paid a seemingly random price.
 
Especially in World Showcase. Many of the WS restaurants - both quick service and table service - are operated by third parties, which means that they don't tend to be flexible with DDP credits. The contracts make it challenging to be accommodating and be reimbursed.

DH and I want to eat at Tangierine on our Epcot day, but I don't like the options on the kids menu there. Bread and hummus would be a much better lunch. Tangierine has bread and hummus in some entree in addition to other stuff. Maybe I will order some and share so kids can eat the bread/hummus while DH and I finish everything else on the dish.

This is your best bet. Get two of the schwarma platters and you'll have plenty to share among you all. The kids will probably enjoy the meat on these platters, so you may even want to get three.

1) If you need accommodations, go to a TS, not a QS.
2) You would not ask McDonald's to split a meal-deal and substitute.
3) Quick Service is meant to be quick, not time consuming.
