Geriatric MM Warriors!

Has anyone thought about green bean casserole? I may try to find a low carb version of it.
Also, if we can't have pumpkin, we could always try to find pumpkin flavoring and make a low carb pumpkin cheesecake with the flavoring. I really hope we can have a bit of pumpkin though.
I make a mean pumpkin roll, but I know the filling will definately be a no-no. I will surf the web and see what I can come up with. I will try it with perhaps coconut flour, if I can find it. Will it give off a coconut flavor if I use it? I love my pumpkin roll this time of year, so would be so happy to find my low carb version.

Kathy, I've been playing with a low carb green bean casserole idea. I found that Campbells Cream of Chicken & Mushroom soup only has 3 net carbs per serving, with one can being 2.5 servings. I'm thinking of using crushed pork rinds for the topping and maybe some pork rind chunked up with the bean mixture. Maybe add a few mushrooms. Haven't made it yet, but thinking about it.
I also found a recipe for Flax/pumpkin/cream cheese Roll at LCF. Good reviews and comes in a about 2 net carbs per serving. Haven't tried that yet either. Let me know if you want to try it and I'll post the recipe.
 
Hi Kathy, wow weird dream, but now that you mention it, I have been having some weird ones since starting MM too...used to dream but never remember them for more than a few minutes....now I remember them vividly and they are so strange sometimes!! Almost like screen shots...We will have to look into dream interpretation and find out whats going on with us! I have a co-worker who actually DOES "sleepeat"...she gets up in the morning and finds dirty bowls and utensils in the sink, wrappers on the counter and has NO memory at all of getting up and eating...its driving her crazy! I told her to put an alarm on the fridge so it will wake her up! I think they really do have them, I think I saw it advertised somewhere! I wouldnt worry about the nyquil, if you need it, take it...might just want to check the carbs...might have to count as 5x5
 

Kathy: With all you have going on if all you drank is ginger ale in your dream, you’re not doing too bad! I agree with Jocelyn, it seems like you should be looking for a legal aid advocate in advance. Maybe someone that could be ready to act on Carrie’s behalf in case the police do show up. It would be better to be prepared than to have to choose someone when you are more distraught. My husband says, “Better to have it and not want it, than want it and not have it.” Cracks me up to hear my son say the same thing now that he's grown. It mostly applies to packing the car, but you get the drift!

Gena: No, thankfully we aren’t near any disaster areas that involve slides, etc. We do get smoke from the wildfires sometimes. Poor Southern CA gets hit pretty hard with both. It’s so good to see you here in the drama-free zone! Bless your heart, you have had so much to bear with your parents lately. Your Mom wouldn’t want your Dad to do this to himself. How sad. I think we'll make a big salad and vegetables too. For the last couple of years, I've made butternut squash soup as the starter course. (It's vegan, Kate!) I have to figure out if it's too many carbs, but I will probably make it for everyone else anyway. Such nice color and I have these cute pumpkin bowls. It's funny, but when I picture Thanksgiving now I picture pleasing my extended family and I don't see myself caring too much about what's on my plate. What a transformation! I'm still losing very slowly, but it is happening. Maybe the biggest shift so far is in my thinking. I feel so calm around food now.:stir:
 
Robin, I thought I saw you say you had lost your PM privileges on LCF? I heard from Cindy on FB. She registered but wasn't getting on easily. She'll let me or Beverly know if she needs help. I haven't heard from Abby yet.

Nell - sorry to hear about your scare yesterday. I am glad that you had a sixth sense about it. A lot of time I will stay in the car when DH goes in somewhere, but I always leave the windows up. Unfortunately in this day and age we can't be too careful. Lisa and Barb - scary stories too.

Gena - so sorry to hear about your dad. I have always felt that widowers don't do nearly as well as widows. Men may be big and strong in some ways, but I think women are stronger emotionally (sorry Tom).

Robin - I will put up a recipe thread. I will go back to LCF and find any recipes that belong to "us" and move them over. I won't touch the proprietary info of the others though. A 12 hour day - YUCK. Today we have sun for the first time in over a week. I will have to get outside for awhile and soak it up.

I'm actually famished today. Still feeling jittery though. Can't shake that one. Not even drinking caffeine today. Hopefully it's just stuff left over stuff from yesterday.
Feeling really tired today from the my nyquil last night. Knew I should have only taken 1 pill instead of 2. I'll take a nap this afternoon, and hopefully not fall asleep during the concert tonight.
Having steaks and salad tonight. Not sure what else. I have frozen veges in the freezer, so probably cook one of those up too.
Just had my chocolate 5x5. It is pure heaven. I am not too big on dark chocolate, but I'll take it any way I can. Wish we could have milk chocolate instead. Maybe I'll get the dry milk today to try the low carb milk. Then I can make my hot chocolate with it. I'll have to double check the carbs on it.
Ok, off to get my steaks.

Kathy, there's hot cocoa on that link Beverly posted. You are probably shaky from the stuff in the Niquil. I am so drug sensitive - half of a Tylenol PM gives me a hangover.

Gena, the last time I shot a gun I was 11. My father, who is from Texas by the way, wanted my brother and I to understand that guns were were powerful and to not be curious about them so that we wouldn't play with them if we ever found one not under lock and key. So he took my brother and I into woods when we were camping and set up a target. Needless to say I ended up on my behind. :laughing: I haven't wanted to shoot one since.

I make a green bean cassarole, but it's a dinner cassarole not the kind that goes with thanksgiving. Mine is an italian sausage with garlic, herbs and parm. cheese in green beans meal.
