Kathy- Wasn't it you having to get rid of the nacho chips? I just posted a recipe for "Cheez-Its" crackers to the recipe thread. It may be a good substitute for you (Or anyone else missing the cracker/chip factor) :woohoo:

Yep, that would be me LOL. Thank you for the heads up on that. I will have to try it. Did you post the recipe, or are you trying it out first? I thought about trying to make some with my millet/flax sami bakery flat wrap that is a freebie. Maybe I'll try that tonight.

I am sorry to hear about all the knee problems. I had one a few months back and it turned out to be weak thigh and hamstring muscles. Make sure you advoid stairs (when possible) no squats and no kicking. This is most common in women (except when you fall.......Lisa) Pillates is a good exercise to stregthen these muscles. Don't go too long with pain, get checked, you could be rubbing bone on bone meaning no cartlidge. Also be careful on the treadmills, I recommend using the elliptical less jarring of the hips, my doctor told me to avoid the treadmill.

Lisa, can you send me your recipe for the mocked mashed potatoes? I have a friend starting MM and I was telling her about the cream cheese, but I can't remember the proportions.

Is anyone finding it hard to drink all the water when it is freezing outside?? :upsidedow or is anyone who is doing step 1 for 10 days finding it hard to stick to it?? :confused3

Well I got to get back to work, on Friday my accounting assistant was let go and now I have more work to do so my computer time has been cut down.

Laura, my calf was hurting for months before my knee hurt. My knee started hurting one day just out of no where. I couldn't bend it enough to go up or down stairs. That was around Thanksgiving. About a month later, it was feeling a lot better and Tyson ran into full tilt. He buckled it. I did up my magnesium (and calcium) and started taking the Osteo Bi-Flex. I have been alternating between icing it and putting icy hot on it. When I go down the stairs, I hold onto the railing with one hand and the wall with the other and kind of "hop" down them. Mike has been carrying clothes and such down to the basement so I don't have to carry them down 2 flights of stairs. My knee is remarkably better. I can now pretty much bend it as normal. I also am trying to up my water too.
I do have a hard time getting water in with this cold spell. But I have been drinking decaf coffee most of the day. If I remember right, as long as it's decaf teas, coffees, sodas, etc we can count it as our water intake. If that's correct, I've already had more than my fair share LOL. I finished my 1/2 pot decaf coffee from last night, and a small glass of milk (2%) with my 5x5 chocolate. I was going to make another pot of coffee for this evening. I usually only have a cup or so in the evening. Then have the rest the next day, as to not waste it. Especially at $11 a pound!! :scared1: I really need to figure out how to get cheaper decaf espresso. Shouldn't be too hard, right?
 
Yum. He'd like those biscuits, too. I'm going to have to try those for sure. On that pizza sauce, we're not supposed to have tomato paste. Wonder if there's another way to make pizza sauce? Jocelyn might know. I also like the garlic sauces that are white. Any idea how to make that low carb?

I've used a jarred alfredo sauce in the past that was very low carb. I can't remember if it was Ragu or Bertoli. You could add a little more garlic and use that as a pizza sauce. It would be good for chicken and mushroom pizza :lovestruc

Yum! I'm also thinking of a Thai chicken one we love. I have some peanut sauce made by my manacurist, but the Hossin (sp) sauce has some carbs. I think I could make a batch with pb and Tamari or something.

If you think you'd get some use out of it, Steel's brand has a low carb hoisin sauce that has pretty good ratings at some of the lowcarb sites. If you still are ordering some things from LocarbU, you might see if they carry it.

Hi, Just checking in quick...its 7pm and Im just getting home from the hospital...just have to say that I spent the most amazing and humbling and joyous day there with Pastor Jonathan Falwell...he was the most gracious and down to earth and uplifting guy I have ever met and I am still so totally overwhelmed I cant even process it all into words yet!! Suffice it to say in the short version, Dennis and Rick have come to the Lord!! They both prayed with Jonathan and were saved...Dennis burst into tears during it and moved the rest of us to tears. I am so blessed to have been able to witness this day in their lives in the presence of such an important Man of God and to have witnessed God actually working in the room... I know I am blabbering on and on, so I'll stop now!

So, thanks to all of you for the prayers and continued thoughts for Dennis...he is in a lot of pain and they are just trying to get it under control again...I actually got a smile out of him before I left so that was a good thing.

Laura - YOU are having water troubles? OMG! It is definitely harder in the winter for me too...just not as thirsty! Funny that your goal is to win the Lotto, my state plays Mega Millions and its on my list too! LOL, heres to a win for both of us!!

Bev - thanks for the info on the tilapia...guess I need to find out whether or not mine is farm raised or wild...Im thinking probably the wrong one, since its readily available in WalMart...dont think organic and natural is on their overall plan. Hope the doctor went well for you and they are as proud of you as we are!

Barb - thanks for the hug and the new recipes! We definitely need some new things to try and these sound awesome!

Robin, all I can say is Praise be to God and Jesus. You have brought tears to my eyes with your description of it. Pastor Falwell sounds just as he seems on tv. It is an amazing thing to see someone come to the Lord. I will continue to pray for all of you. It is in God's hands, and he knows what he is doing. I guess when God puts his arms around you, you can't help but cry from all the emotions you are feeling. And one of the best feelings is peace. God blessed both of them (and us) with you. Who says there are no angels on earth?

I found this recipe on recipezaar.com. I've never eaten turnips, but it sounded like something to try. I bought the turnips and plan on making it tomorrow with baked chicken. What do turnips taste like?

Ingredients
· 3 small turnips, tennis-ball sized
· 3 tablespoons butter, melted
· 2 tablespoons sour cream
· 2 eggs, beaten
· 1/4 cup grated parmesan cheese
· salt
· pepper
Directions
Peel turnips, making sure to remove the tough top bits; place in a saucepan.
Cover with water and bring to a boil.
Cover with pan lid, lower heat and simmer for about an hour until tender.
Drain then cut into chunks small enough to fit in your food processor.
Place chunked veggies, butter, and sour cream in a food processor and puree.
Add beaten eggs and cheese and whir some more until ingredients are well-mixed (it won't take long).
Pour into casserole dish and bake for about 20 minutes at 350°F until it's a little brown on top and edges (or you can nuke it for about 7-10 minutes).
You might want to experiment the first couple of times you make it to see how brown you like the top.
You can sprinkle a little more cheese on the top before baking, if you like.
((You can also cube the turnips ahead of time then simmer and it doesn't take so long to cook, but some turnips are so hard to cut when raw that I've given up on that technique and just boil them whole.) Optional: add a garlic clove to the cooking veggies and puree along with everything else.
Fluffier than other mashed-potato substitutes, because of the egg.
 
I had to take my DD18 to the Clinic today as she has a sinus infection and has been having headaches for about 3 wks. While we were there, I weighed myself and guess what? I've lost 30lbs!!! :woohoo::yay: I thought for sure that I had gained over the holidays as I wasn't too strict on following the steps, but I didn't overdo it and I guess that paid off. Yippie!

I'm waiting to start swimming until some swimsuits come that I ordered from WalMart online. I got my old suit out, and needless to say, it was not very modest anymore. All the lining had disintegrated so there was not much left between me and the world....not a pretty sight. It will be fun to get a new suit.

On the tomato paste for the pizza, mine doesn't have sugar in it and has 5 grams carbs for 2 TB.(concentrated). We mix 1 can of water with the can of paste and that is enough for 2 pizzas when you add some fresh tomatoes to it. I would be surprised if each piece had more than 1 gr carb of the sauce. It just gets kind of spread lightly on the crust. You don't need much. We are thinking of making a mexican pizza this week with some garlic in the crust, some sauce with oregano and cumin, then some black soy beans mashed into refried beans and topped with ground beef, cheese, lettuce (or shredded cabbage) sour cream and whatever else strikes our fancy. Can't wait to try this :stir:

Well, I would like to join the "bum knee" club if it has room for one more member. I somehow sat wrong when I was driving and let my knee and leg kind of fall off to the side against the door...this stretched something out and have had sharp pains through the kneecap and unable to walk. I keep trying to readjust it because it just feels like something is out of place, but haven't had much luck with this. Can you catch this from someone else online through cyberspace? LOL Kind of weird that so many of us have had issues with this lately. I know the swimming will help this once I get going.

Barb, You've mentioned a lot of new recipes..I hope you post them all as they sound yummy! I think we all are ready to fix some new things. I would love some legal biscuits. Are they all made with the special blanched almond flour? I need to look for that at my local health food store that sells stuff in bins....maybe it wouldn't be too expensive.

Carol, congrats on the lost 30!! :banana: Just don't go looking for it LOL. I bet your anxious to start swimming again also. Sorry about the knee. I remember a while back, a lot of us were having trouble with our calves hurting. Could this all be connected somehow? I know some people on the other forum were having difficulties with their calves hurting too. That's where I found out about the magnesium. Could our calves hurting have weakened the knees somehow? Hope it gets to feeling better soon. I have been doing stretching exercises on my knee since this all began, and noticed yesterday that I was able to bend it the whole way. I was sitting on the floor dusting some bottom shelves and realized I was sitting indian style. Haven't done that since this all began!!

Robin, hoping things with Dennis improved last night. Still sending special prayers down your way. Take care of yourself too. You don't need to get worn out and then get sick. Get lots of rest and drink lots of fluids ;) I'm sounding like your mom now LOL.

Diane, not sure if I'd like that or not. Never tried turnips. Did try a radish once and it reminded me of eating a tree LOL. I may have to give it a go though.

Question: Do we have to count carbs in the whey protein powder? Thinking of picking some up. Could I use it instead of the almond flour? I know GNC has smaller bags of it, but haven't checked the price yet.

Off to get ready for work. Hope I didn't overdo it yesterday cleaning my house. Only got 2 rooms done, but they are clean from top to bottom. It was so nice last evening. Mike lit a bunch of candles, some of them have mirrors, so they reflect the flames. It was so nice. Just sat back and relaxed and enjoyed the moment. I don't think we do that enough. We are all so busy with our lives. Maybe another resolution. Take time to smell the roses, or in this case the candles.

Thanks, but hey, they didn't offer me a sticker! DD10 always asks for a sticker for her "brother" when we leave the Dr. Little do they know he's 15. :rotfl: She usually looks for one with Spanish wording. He puts them on his school Spanish folder. They can be such dorks some times.

I'll take the trip to Hawaii whenever I can get it, and you can bring the regular some scream, but I'll bring the new aerosol. Works great!

Carol - 30 pounds ! :banana: I put all the recipes in the recipe thread. The recipe book I'm using recommends only the blanched almond flour. If you can find it locally that would be great.

Kathy - I believe whey protein powder carbs would have to be counted the same as a protein drink. Almonds aren't counted since they're a neutral food. JMHO

I found a new guy to do my hair a couple of months ago. I like my hair very short. He did a good job so I went back for a trim last Saturday. He cut the sides and back waaaay too short and left the top too long. I look like this :scared1: except I'm not blue :laughing: Now I have to wait for the sides and back to grow out to get things looking right again. Back to looking for a new hair salon.

Carol: I got such a kick out of some scream! I'll always remember that. Congratulations on your 30 lbs!!! :cool1::cool1::cool1:That's so awesome. I taped the Biggest Loser last night and when I saw what kind of differrence 43 lbs. made at the end, I was so inspired! Our 20 and 30 lb. losses are really very significant! I'm so proud and pleased for you.

I've been laying low today. Had a bad night last night because I tried to stay up and do things yesterday. My ankle was huge and I burned the skin with ice, even though I used a towel. Aloe seemed to help a lot. My respiratory virus decided to give me a relapse yesterday and choked me to death while I was trying to talk to a client. I'm feeling a bit sorry for myself and taking the day to stay in pj's and nap a lot. What a drag! I had such great goals for January. Don't feel sorry for me, I'm just telling you this to explain why I've been MIA.:sick:I want ice cream and popcorn! And soup with noodles, but I won't give in. I have chicken broth instead and some black bean soup.
 
Well, I started catching up with the last 3 days posts and wrote and wrote. I added my pizza sauce recipe and Dana Carpender's Hoisen Sauce recipe. Then....I pulled the plug on the computer - accdentally. Poof, there went everything as I had taken the battery out earlier due to another problem!!!

I'll try to rewrite everything tomorrow and finish catching up on the posts. It is late and I have a very early appointment tomorrow so am off to bed.

Mike is always saying he needs to go to the vet instead of the doctor. Doctors can never figure out what's wrong with him :( After scopes, tests etc, they still have no clue. And vets are cheaper!!
