Geriatric mm warriors (12/30/09)

Kathy: I found that spaghetti squash takes different times depending on its size and of course the density inside. The directions I got on one at Trader Joes is much like what Carol does. It says to rotate it every 3 minutes for a total of about 12 minutes. 3 minute increments helps you decide if it's done. It will 'give' easily to your squeeze and a fork will go in easily if it's done.

Thanks, Carol for the recipe! Sounds like a winner for pizza lovers. We could go crazy with different toppings.
 
Thank you Lisa and Carol. When I made mine, I poked it a bunch of times with a fork, all around it. Parts of it were mushy and parts of it were crunchy. I will have to try it yet again LOL. Thanks for explaining it for me. I will check it at 3 minute intervals and keep turning it around too.
 
Christmas is put away, I'm finished with work today and don't even have to fix dinner. :dance3: My DD 25 is making pizza for everyone. She said she found a crust recipe using spaghetti squash and mozzarella cheese.....I'm thinking that sounds kind of yucky, but if she's making it, I will eat it. She has lost about 30 lbs so far on MM and says she feels much better. She is able to kind of combine it with a low carb diet like Jocelyn and it works for her.

There was a chance of snow this a.m. in Florida, and I know the runners at the WDW half-marathon had sleet this a.m. Maybe Nell won't have to move back to Maine after all.:rotfl2:

Took the plunge and hit the scale at the gym last night, hadnt weighed since first of December, and scale says another 6 pounds gone! Yay! So that is 30 for me total...still do NOT see where it has gone! Mostly from my legs and butt still! LOL, but I do see a bit of decrease in the belly these days so hopefully it will continue to "deflate".

Yeah on the weight loss and the deflation. I jumped on the scales this a.m. and am at a total of 24.5 (that's 4.5 since Christmas - not sure why it's geared up, but I'm not complaining!)

The pizza crust sounds like something I could deal with, and garlic goes into about everything I make! Cant wait to try that one. I found a yummy sounding "cheeseburg soup" recipe online yesterday, combine ground turkey, frozen veggies, chicken broth and some seasonings, then add fat free half and half and shredded cheddar....may try that tomorrow!

Also saw an egg salad recipe that just combines the chopped eggs with cottage cheese and some dill...it was rated high by a number of readers, so may try that one too!

The pizza crust and soup sound yummy, however I could live without the egg salad!

BTW, Dennis started chemo again, so is pretty weak and nauseous, but doing better than expected at this point. Thanks for the continued prayers and thoughts!

Kathy - I buy vanilla without sugar in it at the grocery store. It is usually with the health food items and the regular vanilla. They also charge a lot more to leave the sugar out!!!!

I hope you all are doing well. I've been feeling really tired, so just taking it easy this weekend.
Not much going on here. It is cold, but no snow. Wow, 2 days in a row LOL.

Good Morning, looks like everyone is spending the weekend doing other stuff...not much posting! I survived another 13 hour work day, and slept til 9:30!! Off to grocery shop and try out some of the recipes I found during the week...lets get experimenting ladies so we can post some new recipes to try!

Hope all our California friends were FAR FAR fromt he earthquake zones, although I didnt recognize any of the cities that were reporting trouble...prayers for everyone there though! Looks like mostly shaking and no real damage done, Thank God!!

Kathy - we are heading into 50 degree weather this coming week! Hopefully some of it will head your way too...its going to feel like summer after this darn cold snap. Im sure the ponies will appreciate it too!

I know that our step 1 carb allotment is really low, but what do you think they normally consider "Low Carb" to be? I cant believe some of these recipes I am finding that call themselves low carb, but then show close to 50g in a serving? Lots showing use of that Dreamfields pasta too...I guess the rest of the world hasnt figured out that stuff is a lie! Im all about the veggies at the store this week, so here's hoping we have something to choose from when I get there!

I lucked out and got notice that a family of christian farmers here in central virginia has started a fresh veggie co-op, you can buy into for $35 a year....you get 5 lbs of fresh veggies of your choice, plus a dozen ears of sweet corn when its available every week, plus a pumpkin during that growing season. They guarantee at least 28 weeks for the $35...sounds great to me! Good way to get stuff I dont grow in my own garden and the list of veggies they grow is awesome!
 
My sister lives very close to the epicenter of the earthquake. She was in the mall (at Ross in Eureka, Kate!) at the time. All of the glass came crashing down and she was walking around with a stool over her head trying to figure out how to avoid falling shelves. Part of the ceiling of the mall came down, but there were no major injuries. Her friend lost a lot of glassware and furniture. Olivia was fine in her apartment on the top floor of an old Victorian home, thank God. It was a doozy, but everyone survived pretty well. There were 25,000 out of power.

Robin: I love that co-op idea! My nephew and his girlfriend get a box of local veggies delivered on a regular basis, but they don't get to pick what they want, which is kind of a fun adventure for them. I hope we see more of a movement toward buying and eating locally grown, safe food.

I had a bad night with my knee and the rest of my body is protesting the inactivity. I felt like smashing something last night; I wanted to kick my legs so bad. I hope it gets better soon. We're running out of movies!

Lisa - I hope your knee starts behaving and you can get back to normal activity. I'm happy your sister and niece were safe during the earthquake. I know it's probably silly to you, but I won't even visit CA because I'm afraid of an earthquake.

I signed up on-line for a free 7 day pass to Gold's gym. It's about 5 miles from my house. I know they have a woman's only part. I don't know what it looks like though. I went with my son about 5 yrs. ago because he wanted to join. They gave us a tour, but since it was for him we didn't look into the woman's part. I'm going on Monday afternoon.
 
Hello everyone. I've not been on the computer, so I need to take some time catching up. I wanted to say hello first as I don't know how long that will take. I'm still doing step one and am mostly having shakes, but occasional step one meals. I made my sausage casserole last night as we had friends over, added some macaroni salad for others as a side and it was a big hit. I enjoyed showing that what I eat isn't so weird, and can actually taste good. :)

I've got my little baby kitten laying on my arm while I'm writing. She is just so sweet! Not just because she's a kitten, because all kittens are sweet, but she has a lovely disposition. Very smart for her age too! She's eating crunch kitten food now, which is great. When she came home for christmas I was needing to make baby food for her. I think she's grown three sizes since then. :) I need to take some more photos.

Last night I wore some smaller pants that I picked up at the thrift store. Still size 24's though. I haven't broken a size barrier in a very long time. My body is rearranging though if that makes sense. The shape is changing. For the better except I have to buy new bras because the lift and separate has become hang and droop. :lmao: My waist continues to slowly develop a shape. I'm not worried about it really, it's just an observation on change. I'm well into the 290's weight wise, getting on the lower half of that slowly. To be a size 24 at this weight is really unbelievable honestly. That for me anyway is usually more of a 250 pound clothing size. I have to start thinking about moving back to step two, but I've got to admit that I am loving the simplicity of one. No food cravings, no worry about making sure I have a steady carb supply. It's very freeing. If I go to step two though I could still stay on the smoothies for a while, but change out the cottage cheese for yogurt or fruit added in. Maybe add in oatmeal or one of those muffins using oatmeal flour in the morning. We'll see. I'm not sure I'm really yet. My whole body is doing a general healing from all sorts of things. I'll spend some time today asking god to give me direction without letting my own thoughts get in there.

Diane, thanks for the info on the blended salads. I'm really hoping to incorporate them in. I was thinking that Greek salad, you know adding a little feta, lemon juice and some oil to the blend would be tasty. I could probably sneak flax oil in as an alternative or mixed with olive. Hmmm... lots to think of.

Lisa and Diane, it is wonderful that you have good kids that will take the time to send you updates. I'm glad. You are both wonderful moms and deserve good kids. Kate is great with her kids too, and Kathy. All of you really. It's good to see.

Pony, I will make a point of saying more prayers for your friends and for you. I know it's affecting you a lot. Hey, you hardly mention Ken nowadays. Is it too upsetting with him being so far?

Kathy, I hope it warms for you soon. It's crazy cold here in Florida too. It was in the teens last night. We had to leave the water dripping as the pipes here aren't insulated at all.

Thanks Carol for posting the pizza recipe. Did the squash make a good dough? I'm thinking of other applications we could use it for.

Kathy, the spaghetti squash is mushy and stringing when I cook it. I know it's probably overdone to some, but I like it that way. Maybe yours wasn't done enough in the 15 minutes?


You are right Beverly. Mighty cold down here, lol. I'm liking it. I'm not going to be liking the electric bill though as we're having to run the heat pump on the A/C unit. Friends of ours have a wood fireplace in their manufactured home. I'm thinking a fireplace in Florida doesn't sound like a bad idea for cold nights.

Pony, the veggie co-op sounds great! Good for you!
 
Hi everyone. Glad to see everyone is doing ok.

Lisa, glad to hear your sister and niece are doing fine after the quake. I didn't even hear about it! You can all keep those quakes, at least with tornados, we know they are coming!
Lisa, hope your knee feels better soon. Not sure what is going on with mine. Really hurting today. I am going to the doctor tomorrow for sure. It has a tiny bit of bruising also now. I probably should have gone to begin with, but can't really take time off work if needed. But I can file a claim with Combined at least.
Screwed up a bit today. Feeling sorry for myself and ate some bad stuff :( Tomorrow is a new day, and I'll do better. One thing I have noticed even way back when is that I never got over the carb cravings. They weren't as bad, but they never went away. I can usually control them. But I do get times when I can't.
I've been sitting and laying around all day and starting to go nuts LOL. Getting ready to fold a small bit of laundry, but watched movies and napped a bit too. Ready for warmer weather so I can go outside and do things, or even just sit outside.

I seem to be going in circles and not accomplishing much!!!

I'm afraid to tell you how nice the weather is here! - although we are having some VOG from from the volcanic activity on the Big Island, Hawaii. It is like smog, but from the volcano instead. It makes the air very mucky. The air quality on Hawaii is terrible for those who live there. It does make for wonderful sunrises and sunsets as they are bright red.

We had 4 wonderful dinners out in a row and the scale and clothes seem to have stayed the same. However, I really want to lose a bit more and it is such a battle. The weight number has not changed since I started this. I definitely eat more carbs than I used to since I eat a lot of veggies and cottage cheese. I'm not really sure I want to cut back much more, though.

Robin - a lot of low carb recipes are not all that low carb by Atkins's standards. You really have to analyse them to see what is in them. As I have said before, we are getting quite a few carbs in veggies. I haven't taken the time to go to Fitday or one of the progams that tracks carbs to see how many I am really eating. It might be interesting to do so......

A freind got 2 copies of Jorge Cruise's new book Belly Fat Cure and gave me the extra one. He also says to have 6 servings of carbs a day - one serving being between 5 and 20. He limits added sugars to 16 grams a day. I have started to look at added sugars in things and it is interesting. He tries to find breads without added sugar - Ezekiel is one mentioned often as well as a Bread for Life rice bread. It is amamzing how fast 16 grams total for the day can add up if 2 or 3 grams of sugars are added per serving. A lot of the crackers have 3 grams although they are lower in carbs and have fiber that is legal on step 2. The place where there are a lot of sugars in veggies as well as carbs so all my sugars and carbs would have to come from veggies. I has always just looked at the carbs in veggies, not the sugars. I had to go to another web site to find the sugars as my trusty book only shows carbs and fiber.

It is really a Step 2 plan diet, but he doesn't use the timing Diane uses and there are not as many "free" foods. They are definitely on the same wave-length, though!!

He is into the insulin as being the culprit for belly fat so that is why he worries about sugars so much. He touts Stevia or xylotol for sweeteners - not Splenda. Everyone has their THING. It's almost too bad we have to eat!! A shot of the perfect balance of nutrients would be so simple and then think just how much time we would have for everything else!!:rotfl2:

Nell - I didn't realize you had gotten a new kitten. You know how much I love cats. Having a pet here is not to be, though. Give it an extra rub for me.

Lisa - so sorry to hear you are still so sore - of course, you really did take a tumble. Will you be able to work? Did you feel any shaking from the earthquake? Appearantly everything is OK at our California place.

Diane - Californians just get used to quakes. I couldn't image a tornado or hurricane, although we get threats of hurricanes here and have had some severe damage from them in the past. There was a fairly severe earthquake here about 4 years ago. We were off Island so didn't experience it, but I guess a lot of book flew off our shelves and all the drawers opened up. Someone had cleaned it up for us before we got home, though. They are a bit startling!!!

I followed Diane's recipe for nuts in the book and did them on top of the stove. They came out great - I always thought I needed to toast them a bit in the oven. I then put a few twists of sea salt on them. I thought Bob was going to eat the whole batch out of the pan!! I used half Splenda and half xylotol. I read where someone added some cocoa to her recipe, too. Emerald Cocoa Almonds made at home! It might be worth a try and you could use other nuts.

I put some low carb pasta sauce in the crock-pot with browned hamburger and added some of the ratatouille. I'll add some Shirataki noodles to it later. It smells great so dinner is organized.

Good to see everyone woke up and checked in! I was thinking Kathy and I were the only ones awake! LOL

Lisa - dont blame you for getting a bit stir crazy, sitting around SOUNDS like fun until you actually have to do it for awhile, then not so much! I got my Perricone book the other day and have skimmed through it a bit...sounds like an interesting concept, but pretty regimented as far as the diet part. Im going to take the leafy greens advice and add more and more in as I can get them.

Nell - dont mention Ken much simply because I dont get to talk with him much these days...he has been having internet conectivity issues for about a month now and sometimes goes 3-4 days without being able to get a connection, so we are only able to talk a couple times a week. SIGH...but its all good, he sent me a very mushy e-card a few days ago while he had a connection and it was very sweet! He is going crazy wishing to get home, and hopefully it will all work out so he is home by the end of Feb. His borthday is Feb. 25th, so that would be a wonderful present for us both! Post some more kitty pictures....she sounds so sweet! Isnt it interesting how our sizes and shapes are so different? I know that with 30 pounds lost now, I had hoped for another size lost, but everyone notices the loss and my pants are so baggy in the legs and butt...just still a bit tight in the belly to go down that next size! I am finally starting to see some loss in the hips too, so thats a good thing...I guess it will all even itself out eventually, I just dont even worry about it much anymore. I like step one, and am staying here indefinitely, with the occasional carb cheat like a couple bites of chili with beans, and a chicken salad that had a bit of breading on the chicken...I dont think it will really set me back much as long as its very occasional. My blood sugar seems happy here, and the foods are easy for me! I will send you that Shakelology this week if I can find a small box for it....its amazing stuff in there and I definitely think you would like it!

Diane - thats great about the gym! Our local Golds is sweating it out these days with several Snaps opening in the area...thats the one I have joined and Love so much due to the 24 hour access! Pretty much leaves absolutely NO excuses not to go! LOL Hope you like it enough to join and keep going!

Jocelyn - I always forget about the carbs in the veggies...since MM Im in the mindset of most veggies as free and legal and forget that they are natural carb foods. Im just thinking that since step 2 doesnt seem to work for me, long term it looks like I will be adapting to your way of thinking and just plan to live life low carb! So Im trying to have some ideas for things I can eat on occasion that are still low carb, but something different to shake things up and keep from getting bored. Im thinking the occasional higher carb meal probably wont aggravate my L and P if its just once a month or so, then back to the step 1 basics. Im going downstairs now to make some of those nuts!

Oh TOM? Are you out there? Over the cravings and safely into step one?
 
Back from church and I'm wiped out. Took my friends 2 kids and also my grandson, who was not a happy camper. He has graduated out of the nursery (with it's toys and snacks and general low-key playing) and into a class of "sunbeams" with a real room and lesson. We kind of went back and forth from class to nursery most of time we were there. He was more accepting of the change once they took the kids outside to run races for a few minutes and stretch their legs. He' a moving kind of a guy :yay:

I'm craving something sweet and crunchy right now and am trying to think of a legal way to satisfy that. I guess I'll try the sweetened nuts. This is my downfall. When I'm tired and coming down from being stressed, I want sweets to jack me up. I actually think I will go and fix some celery sticks with peanut butter and some with cream cheese. That crunchiness seems to help.

I will start at the gym with the Ozone pool this week. I stopped by there last week and they gave me a pass for 4 times so I can see if I react to the little amount of chlorine they put in the pool water. I'm not looking forward to spending the 25 mins travel time and the gas money involved but my knees and hips have become worse and I have to do something. Hope it turns out well!

For all of you that are afraid of earthquakes, they are really not that big of a deal. Things shake some for about 10-25 secs and then they're done. Most of the time, the news reports that there's been an earthquake of 3-4 magnitude and none of us ever felt it! You've all seen too many of those "made for t v movies" that blow it way out of proportion. Things might shake off shelves (although I've never had this happen where I live and I've been in Calif for 58 years), cracks might happen due to shaking ( and no, people are not falling down in those cracks never to be seen again) and bricks fall off of building facades......but if you'll notice, no one was killed or seriously injured in this quake. No buildings were flattened or ripped into matchsticks and no high winds or water ravaged the area. A 10-25 secs shake and it was all over. My husband, who is from Queens New York, said that an earthquake is like living next to an elevated train where your apt shakes when one goes by. Except, there's no noise with an earthquake.

I’m going nuts and not any better so just trying to be patient. He’s making spaghetti squash with pesto and grilled chicken with a serving of peas for our carb. It’s easy and very good. I really enjoyed reading all the food ideas from you all over the last couple of days. It seems like we have a rebirth of ideas going on and it’s terrific!

Diane: I’ve been in the Sacramento area for 45 years and the most we’ve ever had from an earthquake is that our desks moved across the floor slowly in 6th grade and one building downtown got a small crack, so you can visit us anytime! I remember having to run to the basement a lot in Kentucky when I was a child. There’s been a lot more damage from tornadoes and hurricanes in the U.S. Carol was right on in her description of the TV movies!

Nell: Congrats on your new baby kitten! What is her name? I really want to resist another after our Charlie died a couple of years ago. We have enough to look after with Bonnie and we want to travel, but I do love cats. It’s wonderful to hear you feeling so well and enjoying your meal creations!

Carol: They say to eat sour when you are craving sweet. I love dill pickles! If you like them you could make some spears to eat with your celery. I, too, have to come up with a lot of things that satisfy that need to crunch! I also like the Atkins bars in the afternoon for my snack since lunch and dinner are over 5 hours. The coconut chocolate one is really good, as is the peanut butter. You might try those when you step back up to Step 2.

Jocelyn: Can you share the link to the spot online to check on sugars in foods? I assume you mean natural sugars. That would be really helpful. I had a hard time finding a chart with glycemic indexes. That was my first idea to try right before I read about MM. All day I've been really anxious to go to Hawaii! I think it's because if I have to lie down, I'd rather do it on the beach, lol!

Robin: That salmon dish with the almond/lemon topping I make is in the Perricone book. I can’t wait to go back to his lentil soup someday on Step 3. I guess I could make it now and we could have a small portion, but we so often had that for dinner by itself. His stuffed peppers are also fabulous. Tom and my Dad like them a lot. I hope Ken gets home before his birthday! I know you miss him so much. :hug:
 
Lisa – here are the sites I looked at for the amount of sugar. I was interested in the veggies that I eat a lot of. I had always just counted the carbs, but the numbers for carbs and sugars are different.

Went to the gym for a while today and then watched a bit of football. Bob went for a walk and had to call me to come rescue him as it started to pour. He was several miles from the house.

Bob is playing in a large bridge tournament all week. I am going to try and sort through a few more drawers and try to eliminate a few more things I have not used in several years!!! The pool has been a bit cool for my swimming. It shouldn’t be long, though, before I can be back at that. The days are warm, but the evenings have really been cooling down and they don’t heat the pool.

Carol - I hope you can use the pool you were talking about. It really is great exercise without hurting the body parts!

Kathy -hope you got to feeling better. The cold would really get to me and I would probably just hibernate until it got to be 80 degrees outside!!

Good morning everyone! I am feeling better so far this morning. Had a great night's sleep on the couch last night. Mike was up all nite, and he said I had my leg propped up on the back of the couch until about 5am. I started waking up around 5:30, and my knee wasn't hurting at all. I didn't even know I slept like that. I don't like sleeping on my back much. I mostly sleep on my belly, and spread out over the whole bed LOL. But I'm thinking I may be sleeping on the couch until it feels better. Still trying to figure out if I should go to the doctor or not. It's been almost 3 weeks, and it is slowly getting better. It only hurts if I don't prop it up after working all day. If I come home and prop it up for an hour or so, I'm ok. I think if it bothers me too much today after work, I will be going. I honestly think it's a pulled tendon or something to that effect.

Lisa, hope you're not too bored having to sit around. It's true if you don't HAVE to do it, it's ok. When you have to, it really can be nerve racking LOL. Sending some healing hugs to you :hug:

I'm glad you are all ok out there in CA and the earthquake. I know my sister lived near San Bernadino, and she said she could always tell when an earthquake would "hit" because it sounded like a big truck coming down the road, then things would begin to shake somewhat. I guess you would become used to them. Just wouldn't want it to happen in the middle of the night!!

Ok, off to finish getting ready for work. Have a good day everyone! I'm back on track with step 1. Yesterday's carbs seemed to have calmed me down. I had a tiny bit of cereal and a few nachos. Just can't seem to get those dang nacho chips off my mind!! I love to eat them as you would crackers. I'm thinking the few I had won't hurt me too badly. Just love the salty, crunchy, corn taste. Those I do crave big time!!

Good Morning! Waking up to some warmer weather makes me a very happy Pony! Sun is shining and they are promising it will make it to 50 degrees this afternoon! Kathy, I hope you get some of this too!

Carol - hope you get to the pool, I know it will make you feel better if you can tolerate the chlorine and get some swimming time in. Hope things are still going well with the counseling too.

Lisa - I am going to try to find a way to get the salmon in, since Perricone stresses its benefits and it is one of the fishes I can actually get here pretty regularly. How do I know if it is farm raised or wild though? Will it say on the packaging somewhere?

Got to have a nice long chat with Ken live on the yahoo messenger this morning so that has me smiling today!! Hopefully his connectivity issues are behind us and we will be able to do more than send occasional e-mails for the rest of his time there.

Kathy: Glad you're knee is slowly getting better. I think I may have turned a small corner with mine last night. I slept better and seem to be able to roll over without screaming, lol. Put down the chips! Can you get them out of the house? Once you get to Step 2 you can have certain chips. Counting them out in advance is the key.

Robin: The salmon will be labeled. Believe it or not, you can get wild Alaska salmon at Costco. In the frozen section in a bag with individual wrapped pieces so you just thaw out the number you want. I make extra of the almond topping and freeze them in containers for 2 pieces of fish. Makes it very quick.

Yesterday the top part of my post was missing. I must not have copied it all. I was saying that Tom had me on restriction to the couch and I was going nuts, but very uncomfortable at my desk. It cheered me up to read all of your posts and to see how energized and creative you all are in the New Year.:cheer2:

I made bisquits this weekend with the blanched almond flour I got. OMG, they are great! Added cheddar and bacon bits, hubby was very happy. The blanched almond flour is SO much better for baking. The author of the recipe book I got does not recommend using regular almond meal/flour. The blanched almond flour I ordered online is quite pricey but worth it. If you can find it locally it would probably be cheaper. Let me know if you want the bisquit recipe and I'll post it.
Someone tried to break in the back door at work again over the weekend :headache: The doorjam and lock were ruined. The only thing that kept them from getting in was the rebar contraption that DH put on the inside. I feel like I need to put a sign on the backdoor that says "We don't keep cash here anymore, *******" :laughing:
