Are the Gatwick Hilton and the Sofitel (formerly Le Meridian) the only hotels on the Gatwick Monorail?

I believe they are the only two hotels actually on the Gatwick airport site. The monorail joins the North and South terminals.

Yes, as Tim says, they are the only 2 hotels actually attached to the terminals (Hilton to south, Sofitel to north). The monorail runs between the two terminals, not exactly from one hotel to the next.
