GAD fastpasses....we'll have 6 people plus one 15 month old

Okay, he counts as a person, but does he count as a person needing a fastpass for a ride? If we get FP for the 6 of us ticketholders, will we be out of luck in using our GAD fastpasses for all of us plus him?

Your 15 month old will not need a fastpass, just as he does not need a ticket.

A child 2 or under doesn't have a park ticket, so you cannot get a FP for them, or get a GAD FPXC either. However, they do not require a FP to use the FP line so long as they are accompanied by and adult who does have an FP, and of course that they meet any height requirement for the attraction.

For height-restricted attractions, you need to be aware of Rider Switch.
