Fun "school projects" for young ones at Disney

We will be taking DD (starting Kindergarten this fall-half days) out of school for 4 days to head to the World in Sept.

I'd love for her to do a project for school to take back and show her teachers. Off the top of my head, I was thinking of an ABC book (writing the letters on a page before we go and taking pictures of something that starts with each letter, etc etc).I, of course, will be asking for her teacher's input. However....

Tell me about some of the things your young ones have done to show their learning experience at Disney.

When she was in Pre-K, she just did a picture collage and made a presentation to her friends (talking about each of her grandparents who had gone with her and the things that THEY used to do for their vacations)...it was really cute, but not really "academic".

I got some worksheets off one of the disboards here for my eldest, but there was really only coloring sheets for my l/o so I'd be interested in ideas, too.
I will find out from the teachers what subjects they will be working on while we are away and hopefully encorporating something from that. My eldest spent a great deal of time studying life in pioneer times this year, and I know there is a lot I could relate to that subject at Disneyworld! I remember in grade 2 they studied different cultures, which would be a no-brainer for Epcot. It's tougher for the little ones, though. I guess coloring is an important activity at that level as it helps with their motor skills. We will be getting the Passports at Epcot for both boys, and taking them to the Kidcot tables, so they can show them at school. I'll be watching this thread for more ideas!
