Here's the thing to remember Nikki - lox is NOT uncooked. It's smoked. It's just as much cooked as properly BBQ'd ribs or brisket, via low, indirect heat and the accompanying smoke.

I'm still confused about the entire raw vs. smoked debate. I've Googled my little heart out and I keep coming up with sites saying it is technically raw.

Well, I guess it doesn't matter though...

We're only at $409 so I won't have to eat any lox.
