Frozen Mixed Fruit from Sam's

School is starting here next week and as a volunteer at our private school I am helping with three day of breakfasts for the Jr. High Students and their parents. We have about 150 people a day for 3 days

In the past we have sausage kolaches, glazed donuts, bagels with cream cheese and bowls of Frozen fruit from Sams wholesale club.

Last year the fruit was not very popular - about half was eaten. It was soggy and some pieces were still frozen. I've priced fresh fruit trays and they are just too expensive.

Does anyone know how to serve/prep the frozen fruit from Sams so it is prettier and tastes better?

Any help would be appreciated.
 
Don't know about frozen fruit...but what about bananas as a fresh, affordable alternative?
 
My suggestion would be to get cans of Dole Tropical Fruit Salad (I believe I've seen it at Sam's Club) and add your own bananas, strawberries, dried cranberries, etc.

I've done that in the past for office parties, and folks really seem to like it. The ascorbic acid in the fruit salad keeps the bananas from turning brown. I also keep several cans of it at home just in case I need a last minute dish to take somewhere.

After I mix the bananas in, I usually drain a fair amount of the juicy so it looks more like fresh.

Yummy, and I think a little more cost effective than buying all fresh/frozen fruit.
 

We used the bags of frozen fruit from Sam's for our Wedding reception. We took them out of the freezer about two hours before the reception was to start and all the fruit turned out fine. It was not soggy at all.

Did you put the fruit in bowls or trays? I was wondering if it made a difference. I know that last year they took it out and put it in bowls the night before and added a bag of frozen strawberries. Maybe ours was soggy because it was in the fridge all night?
