Interesting question. I assume you mean batter-fried rather than stir-fried. I did some research at allearsnet.com, and this was all I could come up with.

If you mean fried shrimp like jumbo fantails--I don't thnk any WDW spot has any. At least I've not seen any. Once in awhile we'll see Rock Shrimp fried--but that's hardly the same thing.
Kona Cafe at the Polynesian at Dinner serves a fried Shrimp and scallop dish that comes with rice. That's the only fried shrimp I can think of on Disney property. Good luck!
On May 10th, I had a delicious Coconut Fried Shrimp appetizer at the Brown Derby. I decided if we ever go back and it's still on the menu, I will get 2 orders and that will be my meal.
House of Blues had a great fried shrimp po-boy sandwich last time I went and it was so good that if it's still on the menu I'm definately making a special trip to the HOB just for that.
