Can anyone point me to the best places to get fresh fruit in the parks? (If such places exist!) I am specifically interested in grab-and-go type purchases (a single apple or banana, for example), rather than items on a table service menu.

There are stands that have fruit all around the parks. In MK, there is an area in Liberty Square (Liberty Square Market right outside Hall of Presidents) with a good selection of whole and sliced fruit. Sunshine Seasons in Epcot (inside The Land pavilion) has fruit as well. Other locations I know of are Anaheim Produce on Sunset Blvd in HS and in AK at Harambe Fruit Market near the entrance to the Safari. It's not to hard to find the fruit stands. These are not the only places to get fruit, but they are the main ones. Enjoy.

And some of those places sell fresh cut up fruit that is very freshing.
 

Another good on in EPCOT is the Land Cart outside of the Land on a walkway as you go toward Journey into Imagination. Also, just FYI any of the Starbucks locations usually have at least pineapple and banana.
 
In AK there is a stand in Africa that sells a lot of fruit. In MK Liberty Square has a similar set up. We always seem to find them around the parks though. Grapes, Apples, banana, clementines and watermelon seem to be the most prevalent.

Stole my thunder. These are our go to fruit joints.
 
We often get the fruit and cheese pack from the AK stand near the safari.

Any other healthy snacks in the parks of the grab-and-go variety that anyone wants to shout out?

At the different stands (usually the bigger ones mentioned here already) you will also find things like veggie snacks (carrots, celery, etc...) and hummus, and different juices. Over in Toy Story Land in HS, Babybel cheese now has a presence. If you are looking for healthier table service fare, I recommend Satu'li canteen in AK. You can grab some to go California rolls (or things like steamed veggies) from Katsura Grill in Japan in EPCOT, and several healthier options at Sunshine Seasons in EPCOT as well. At MK I go to Harbour House sometimes for some healthier options if I want to sit down and eat.

They are a great value. You can get for adults, to share and we even save some items for later. Traditionally this is what is included but sometimes there might be a slight variation.
