I have a similar dilemma. We're going the week after Easter (we go before or after Easter every year). We're staying off site, so our window is 30 days and we're not trying to get anything crazy popular. We always rope drop, then take an afternoon break, then go to another park for the evening. On our last trip we had a lot of success refreshing, but I'm concerned that people are catching on and availability will be diminished--we certainly never saw a message that all fast passes had been distributed for the day.
Right now, for our first day, we're planning to do Epcot and then AK in the evening. My parents are older and like to walk at a not rushed pace at rope drop, so they'd prefer to have a fastpass for Soarin so they don't have to worry about keeping up with the rush. In the evening, my family would really like to do the Safari, but that's the only "must-do" ride for AK. I feel like it would make the most sense to book morning fast passes for Epcot and then have hours of time to refresh and try to get the safari in the early evening, but I definitely have the "but what if we don't get it" anxiety! Anyone have any thoughts or advice?
