I have tried to read through the FP+ thread and the express transportation thread. I'm confused.

My 60 day mark is coming up.

We are there for 8 nights so I want to spread things out.

I want to clarify the following:
When I pick FPs I have to pick 3 in the same park. Let them expire or use them before I can pick more in another park? Or more in that same park?

I thought I read a change that we can pick the 3 from more than 1 park now??
What does this mean? In advance or just day of?

You will have to either use the original 3 FP+ selections or let them expire prior to booking a 4th. The initial 3 must also be within the same park, but if you're going to be hopping, you can book the 4th for a different one. You also don't have to book 3 FP+. You can book one or two, and once those are used/expire, book another.

If you pick 3 they must be in the same park. As soon as you scan your magic band at your 3rd fast pass you can then schedule others. If you schedule one for MK, you may schedule more for a different park, say Epcot, as soon as you scan that first fast pass. FP scheduled for more than one park can't be scheduled 60 days out. You schedule one for one park then the others once you get in line for the firstborn FP. There is a really helpful thread on this.

There are step by step instructions for FPs for park hopping in the FP FAQ ADDENDUM that is linked to the FP FAQ and in mesaboy2's Signature.

You only need to allow FPs to expire when you stay in 1 park and want to try for more than 1 Tier 1 Attraction.
