Actually just got back from a trip with no rope drops. FP+ makes it doable. Here's what I'd suggest for each park. To adress your question with Epcot, make dummy FP+s for 9-10 and 10-11 then make one for Soarin' that starts between 11 and 11:30. This is one of the two days of your trip you should try to be at the park no later than 11:30am. Perhaps making a breakfast ADR at Akershus for 10:15am or doing a QS breakfast in the room would push you guys to move a bit quicker in the morning. If you do that, you might just be able to get a TT FP+ for your group (we were able to) but you've got to move quickly. If something goes wrong and you can't get a TT FP+, use the single rider line as your back-up plan but if you're in Epcot by 11:30, you should be fine. A similar situation is found at DHS. Make two dummy FP+s for 9-10 and 10-11 then make one for Toy Story Mania! that starts between 11 and 11:30. This is the other day you'll want to be at the park no later than 11:30am. If you do this, you should be able to get a FP+ for RnR at one of the kiosks and go standby for ToT, which shouldn't be too long before noon or after 4pm. Another option is scheduling your ToT FP+ at 10:30 to 11:30 then your TSM from 11:30 to 12:30 and arriving at 11am and you can do both. Either scenario should work but just try to have that RnR FP+ in hand by noon. Arriving late is much easier at MK and DAK. Choose FP+s for 12:30 to 1:30, 1:30 to 2:30, and 2:30 to 3:30 then try to see what other FP+s you can get for later in the day. This should work at both parks, but be sure to stick around until park close to take advantage of short waits, especially at DAK. Particularly with the parade gone, waits times drop off incredibly after 4:30pm with EE sitting as low as 5 minute wait! Hope that helps a bit!
