Okay Jody, since you asked, I will share some of the ways I prepare my veggies. Mind you I am in no way creative with them, but I make them in a way that I can enjoy them.
My favorite is to "stir-fry" them. I liberally spray my frying pan with Mazola cooking spray, then I add a little bit of salt and pepper to the bottom of the pan before adding my veggies. Then I cut up broccoli, julienned carrots and zucchini and stir fry them in the pan with a little bit of water. If the vegetables are still hard when the water evaporates I add a little bit more until the veggies are just the way you like it. At the very end I sprinkle a little bit of teriyaki sauce on the top.
I also love green beans, but the way I like them adds a little bit of fat to the recipe. I have trimmed it down so that it isn't so bad though. Take three strips of either reduced-fat bacon or turkey bacon and cut it into little bits. Fry in a pan until almost cooked, add whole green beans and a small cut up onion to the pan, cook until vegetables are tender, add salt and pepper if desired. The bacon provided the only points in this recipe, for reduced-fat bacon it is 3 points for the whole recipe, if you use turkey bacon it is only 2 points for the whole recipe.
Steamed vegetables are another favorite, especially broccoli and cauliflower. I like to steam them with fresh garlic and usually spray them with I Can't Believe It Is Not Butter spray.
