You have gotten a lot of great advice so far. Jan/Feb used to be a favorite time for us. It felt like a great break from the winter weather, but now we stick to the school schedules. I can tell you that we have been in tank tops one day and wearing everything that we packed the next! Bring your gloves and hope you don't need them.
As far as park days I think it will depend on what you think your kids can handle. Before kids we would go 2 or 3 days before taking a day off, but with kids every other day works best. This year was our first with the new ticket system so I thought that we would go more days for shorter times but it didn't work as well for the kids. Ours are 2, 5 and 9 and the younger ones really needed the down days. I functioned better that way too.
