Can someone please give me the specifics regarding bringing food in the park? Are granola bars, crackers, etc ok? How about a juice box? Thanks for the info!

Yes, those are all fine. Water bottles, sandwiches, fruit, pretty much anything you want but no glass bottles, alcohol, etc. You can use a small, soft sided cooler but not a large one. We've never been questioned about anything we've brought in the park for snacks.

I always brings snacks and water in my backpack. I usually bring granola bars, crackers, trail mix, etc.

This is one of the things I really appreciate about DL. A lot of theme parks will search your bags and make you throw out food or drinks. So many people have dietary restrictions, food allergies, money issues, etc. that being forced to buy food at the park is an issue. And even though I do bring in a lot of my own items, we still manage to spend plenty of money on snacks or other things, so it's not like they're losing money on food. I wish more places had this policy!

You can bring anything food wise as long as it doesn't need to be assembled to eat. So, for example, no bread and meat to make sandwiches but you can bring an already assembled sandwich.

Officially the policy is no outside food, with the exception of special dietary needs.

In practice they will allow you to bring in prepared food, as long as it is not in glass containers. You can NOT bring in ingredients (ie jar of Peanut butter, jelly & bread) but a PB&J is fine.

The pp is correct, no separate ingredients, but a ready-made sandwich is fine. Also, the no glass containers applies to condiments, too. We saw someone's Tabasco Sauce get confiscated -- she was not happy about that!
