I have only been to one in my life time, but I was wondering if there were any Asian restaurants or others where your food is prepared while you watch?

Yes, Teppanyaki in the Japan Pavilion at Epcot's World Showcase. It is a Benihana-type restaurant.

Yes, Mitsukoshi Teppenyaki of Japan at Epcot is a restaurant where the cook in front of you and it's very entertaining. However, there are many restaurants on Disney property that have open kitchens, where you can watch them prepare the food and even ask them questions. Most Chefs are very pleased that you are interested in what they are doing. Feel free to just walk up and start talking to them. Have fun!
