My wife has moderate back problems. Is Flight Of Avatar a bumpy ride? For example, she cannot do roller coasters, or rides that jerk around.

Actually, Avatar does not move much at all. The seats vibrate and there is a little tilting, but mostly the motion is simulated on screen. It's much like Soarin. That said, you do sit on the seat like a motorcycle and a restraint raises up over your lower back. I have back issues and it's never been a problem for me, but it's best to be aware that this will happen.

Early on when this ride opened, for safety reasons CMs really pushed down on the back brace part to make sure guests were locked tightly. As time went on they weren’t doing it quite so tight. I have moderate back problems so try to use other parts of my body to prevent stress on my spine (eg- Thunder Mtn I’ll use my legs as shock absorbers so jolts go more through my legs than spine). FoP doesn’t jolt, but I found a few rides locked in so tight I could barely breathe or move, and that tension isn’t the best thing for my spine.

So now I take a deep breath and extend my belly a bit when the CM comes around to make sure everything is locked and tight. Obviously this is a safety mechanism and it’s not advisable to leave any gaps here - just a smidge of breathing room.

There is the back brace, leg braces and the handle bars to hold. The ride feels like Soarin’ but individual, with more leaning left/right and down, and a physical position similar to TRON.
 
no issues with my back other than when the restraint closes on my back and hits it. That hurts a bit but I’m fine after that

Like you, when they say to push your hips and stomach all the way up against the center console thingy, I leave just a little bit of room so I am not totally squished by the back bar. I have never remotely felt like I was going to fall out.

Yeah, the ride doesn't rock around nearly enough to actually throw you out. It's more to keep someone from trying to get off mid-ride.

I could have sworn I watched a "bag video" once shot from someone's camera they'd propped up by their things and I was kinda shocked how much the platform moved around, actually. Anyone else remember that?
