Ok. I am using Disney's shuttle and wasn't sure what their requirements were. I know from DisneyWorld, they require 3 hours (or maybe its 4 now) prior to flight for MDE.

As @PrincessShmoo said, they will let you use DCL transportation as long as your flight is at or after 11:30AM. We easily made a 12PM flight and barely two 10:25AM flights. With your current flight time, you can be the last off the ship around 9AM and you’ll stil have a lot of time to spare in MCO. If you’re looking for a good meal while you wait, look at McCoy’s at the Hyatt. Very good lunch menu. Way better than the food court.
I second McCoy's- better value for your money. If you have been to WDW, you know that security lines at MCO can be a nightmare. 3:15 flight should give you time for an early lunch, time to wade through security and buy snack on the other side for trip home. Have a great cruise!
3:15 pm is perfect. We barely made a 12:35 pm flight. We used Disney transportation. They got us there by 10:15 am but the security line at MCO was nuts. Had our boarding pass by 10:30 am and in line for security then. Literally walked on our plane 90 minutes later as it was already boarding.
Your going to have a long wait at the airport. Don’t go through security when you first get there. Check out some of the stores before heading through security.
