Fishing from shore around Disney World

My family and I are planning our August 2015 trip now. We are DVC members. My step son loves to fish and I would love it if he cold walk to a canal, pond or lake at times. I am aware that Fort Wilderness has fishing everywhere but I have to admit is it at the bottom of our list for a stay as we are camping the week prior to this vacation. Port Orleans also allows fishing but is not a DVC resort.
Is it permitted to bring you own pole and find a curtious spot and just fish? Boardwalk, OKW and Saratoga Springs are topping out list.
Also we do plan on an excursion but this question is for basic fishing from land or pier. Not guided or rented.
We understand it is catch and release on property

After a quick Google search, it appears that fishing is only allowed from the canals at FW, otherwise you may be subject to fines, etc.

Even the cane pole fishing at POR is catch & release.

When we stayed at the FW Cabins we did some fishing in the lake. They have it set up for fishing and they even rent poles and sell worms. Catch and release only.

I've been looking too, and had assumed from what I could find that the only way to fish was to pay to rent a pole at PO or pay for a Bass expedition. Is is possible to fish at FW if you bring a pole or only to rent? Any idea where/what the prices are for that?
My boyfriend is a huge fisher, and always catch and release, so that part is normal for him.

In fact,this one at Hourglass Lake is the only one I have seen.:)

You probably saw one here because they probably had a problem with people fishing. Our first few trips here (and we usually stay lake view) we always saw people fishing on a regular basis throughout our week.
 
At POR you may ONLY fish at the "Fishin' Hole" and you must pay even if you bring your own equipment. Hour are limited...7:00ish-2:00ish. May guests from other resorts fish for free at FW and is there no charge/hour restrictions?
 
Since there are gators in every large body of water at WDW (and many smaller ones) I wouldn't go fishing anywhere unless it was promoted as a fishing spot by Disney.
