First trip as a family

We had a fabulous trip to Disney World a few months ago, and are now looking at vacations for next January. My husband's family lives in San Diego, so we plan to visit them for a week with our then-six year old twin girls.

Of course I'm planning to add a day at Disneyland! I know one day isn't enough, but this year's Disney World trip turned into a fabulous 10 day onsite adventure thanks to the blizzard that hit our under-prepared area the day we were scheduled to depart for Florida, and my husband is not enthusiastic about even a day at Disney, so I'll take what I can get.

We want to ride some of our favorite rides but also see new things - the Nemo ride, the Olaf meet and greet, a Space Mountain my little adrenaline junkies will be tall enough to ride...

But planning for Disneyland is all new for me! A few questions for the experts-

1. January hours are showing as 10 am to 8 pm (planning to visit on a Thursday). Do they ever add hours for holiday weeks like MLK day or is this as set in stone as Disney ever is?

2. Early admission - we loved extra magic hours in Florida and with only one day at Disneyland I'd like to explore this option. Maybe one night onsite to get the benefit? We qualify for military discounts so that's an option but 2017 military discounts won't be announced for a while. Which of the onsite hotels tends to be (let's be honest) cheapest?

Thanks! I realize planning this far in advance isn't as necessary for Disneyland, but my mind is so used to Disney planning from our last trip that I'm itching to start planning this one!
 
Of all the onsite hotels - the Paradise Pier is almost always the cheapest of the three.

Hours are not posted until 6 weeks out - while you can see historically what operating hours have been - and yes, hours can be adjusted depending on the crowds expected and any other events that could be going on at the parks such as races.
